Physical work becomes very difficult and even learning abilities can be diminished. For women, pregnancy becomes risky and they cannot be sure of producing nourishing breast milk. When a person is not getting enough food or not getting the right sort of food, malnutrition is just around the corner. Disease is often a factor, either as a result or contributing cause. Even if people get enough to eat, they will become malnourished if the food they eat does not provide the proper amounts of micronutrients - vitamins and minerals - to meet daily nutritional requirements. Malnutrition is the largest single contributor to disease, according to the UN's Standing Committee on Nutrition (SCN). Malnutrition at an early age leads to reduced physical and mental development during childhood. Stunting, for example, affects more than 147 million pre-schoolers in developing countries, according to SCN's World Nutrition Situation 5th report. Iodine deficiency, the same report shows, is the world's greatest single cause of mental retardation and brain damage. Undernutrition affects school performance and studies have shown it often leads to a lower income as an adult. It also causes women to give birth to low birth-weight babies.

Water supply, sanitation and hygiene, given their direct impact on infectious disease, especially diarrhoea, are important for preventing malnutrition. Both malnutrition and inadequate water supply and sanitation are linked to poverty. The impact of repeated or persistent diarrhoea on nutrition-related poverty and the effect of malnutrition on susceptibility to infectious diarrhoea are reinforcing elements of the same vicious circle, especially amongst children in developing countries. Malnutrition essentially means “bad nourishment”. It concerns not enough as well as too much food, the wrong types of food, and the body's response to a wide range of infections that result in malabsorption of nutrients or the inability to use nutrients properly to maintain health. Clinically, malnutrition is characterized by inadequate or excess intake of protein, energy, and micronutrients such as vitamins, and the frequent infections and disorders that result. People are malnourished if they are unable to utilize fully the food they eat, for example due to diarrhoea or other illnesses (secondary malnutrition), if they consume too many calories (overnutrition), or if their diet does not provide adequate calories and protein for growth and maintenance (undernutrition or protein-energy malnutrition).

An individual will experience malnutrition if the appropriate amount, kind or quality of nutrients comprising a healthy diet are not consumed for an extended period of time. An extended period of malnutrition can result in starvation. Malnutrition as the lack of sufficient nutrients to maintain healthy bodily functions is typically associated with extreme poverty in economically developing countries, while malnutrition as the result of inappropriate dieting, overeating or the absence of a "balanced diet" is often observed in economically developed countries (eg. as indicated by increasing levels of obesity).

The leading cause of death in children in developing countries is protein-energy malnutrition. Children who are already undernourished can suffer from protein-energy malnutrition when rapid growth, infection, or disease increases the need for protein and essential minerals. In the United States, nutritional deficiencies generally have been replaced by dietary imbalances or excesses associated with many of the leading causes of death and disability.
