It has been well documented that the foods, tastes and spices of Afghan food are a rather tasteful blend of the regions that surround Afghanistan. Unlike food from it's neighbors to the east, the spices used in Afghan dishes, are neither too hot nor pungent, and in contrast to it's western neighbors, Afghan food is not bland. In fact may western travelers find the foods of Afghanistan a perfect blend of exoticness and good taste. Cooking and food has a very important role in Afghan culture. Unexpected guests might be seen as rude or an imposition in western culture, but not in Afghan culture. Guests are revered and even in families, people often just drop in with little or no notice and to not have food for them would be unheard of even in the most spur of the moment situations. Coming away from an Afghan table hungry is simply never happens, no matter how little preparation time the host has. The types off food served are also symbolic for example Qaabuli Pallow is the crown of Afghan cooking and served to special guests or on special occasions such as weddings. Letee is served to new mothers because of its easy on the stomach yet high nutritive value. Dogh is best enjoyed on a hot summer's day and Mahi is served during Nowroz (New Year). Even eggs are prepared in a special way so that a guest is well nourished when they wake up. Afghans also believe food is elemental in nature, and can produce hot or cold, or be neutral in the body. Food is well appreciated and even has special meaning as stepping on a piece of dropped bread is considered sinful.

We are extremely grateful to have a guide to the nuanced food and cookery of Afghanistan. Please also read her personal story to learn more about the human heart of Afghanistan. (click here) Afghanistan is situated at the meeting place of four major cultural areas: the Middle East, Central Asia, the Indian subcontinent and the Far East. It is because of this geographical position that Afghanistan became the crossroads for many invading armies from different places each with their own culture. These marauding armies, often passing through Afghanistan, journeying further afield, realised the advantages of maintaining strongholds here and paused for a while.
In the fourth century BC, Alexander the Great conquered Afghanistan on his way to India; in the thirteenth and fourteenth centuries AD, Afghanistan was plundered by Genghis Khan and the Mongols en route to the Middle and Near East. Babur, founder of the Moghul Empire in India and a direct descendant of Genghis Khan, began his rise to power in Kabul and is buried in his favourite garden on a hill in Kabul, the Bagh-e-Babur Shah. The conqueror, Nader Shah Afshar invaded and conquered Afghanistan in the eighteenth century on his way to India recruiting Afghan fighters to serve with his troops. The British in India were twice invaders in the nineteenth century. Afghan dynasties, in their turn, have flourished and at various times extended their influence to parts of Central Asia, India, Iran and even China.

Afghanistan, (which literally means Land of the Afghan) is a mountainous land-locked country located in Central Asia. It has a history and culture that goes back over 5000 years. Throughout its long, splendid, and sometimes chaotic history, this area of the world has been known by various names. In ancient times, its inhabitants called the land Aryana. In the medieval era, it was called Khorasan, and in modern times, its people have decided to call it Afghanistan. The exact population of Afghanistan is unknown, however, it is estimated to be somewhere around 21-26 million.
Afghanistan is a heterogeneous nation, in which there are four major ethnic groups: Pashtoons, Tajiks, Hazaras, and Uzbeks. Numerous other minor ethnic groups (Nuristanis, Baluchis, Turkmens etc.) also call Afghanistan their home. While the majority of Afghans (99%) belong to the Islamic faith, there are also small pockets of Sikhs, Hindus and even some Jews. The official languages of the country are Pashto and Dari (Afghan Persian). The capital of Afghanistan is Kabul, which throughout history, was admired by many great figures, such as the great Central Asian conqueror, Zahirudeen Babur. Unfortunately, due to many years of war, this great city has been shattered and nearly destroyed.
