Taste of Afghanistan includes Afghani Naan, Kabuli Palow - afganii styled rice pilaf, aushok, kebabs (lamb, beef and chicken), sambosa, crispy triangle purses of fried pastries filled with ground beef and chickpeas. Mantu, steamed dumplings fattened with minced onion beef, buranee-e-kadu or eggplant, chunks of fragrant butternut squash or eggplant topped with a dollop of creamy white yogurt and a spoonful of keema, a light meat sauce made with oil, chopped onion, ground beef and tomato puree, subzi or sautéed spinach delicately tempered with onion, salt and garlic. Afghani desserts are best taken with cups of not-so-strong but decent choi, Afghani black tea.

Note: If you have a lot of time or have a large frying surface like a smooth griddle you can make a very large bolaanee, but since most people do not, I am not going to include how to make the dough from scratch. If you are really interested then e-mail me and I will send you the recipe. As a great and easy substitute use a package of egg roll wrappers and 1small bowl with 1/4 cup of water to seal the bolaanee.
Instructions
Clean and boil the potatoes until they are very soft and let them cool. Peel the potatoes and salt to taste while mashing them with a masher or fork. Take the egg roll wrapper and fill it 1 tsp of potato and place it in the middle of the wrapper, and smooth down in the center. With your finger, dip it into the bowl of water and run the water around the edges of the egg roll wrapper. Take the end of the wrapper and attach it to the other end diagonal from it. Pinch together the wrapper all the way around and the bolaanee will form a triangle. Do not over or under fill the center, and make several before you begin frying because once the oil gets hot you will have trouble cooking them and making them at the same time. Fry until golden brown ~3 minutes on both sides. Drain the excess oil as you lift the bolaanee and place them on a plate with several paper towels under them to help remove the excess oil. Ingredients
  • 2 lg Cloves garlic
  • 1/2 ts Salt
  • 2 c Plain, whole-milk yogurt
  • Juice and pulp of 1 large lemon, 3 to 4 tablespoons
  • 1/2 ts Cracked black pepper
  • 2 lg Whole chicken breasts, about 2 pounds
Directions
Long, slow marinating in garlicky yogurt tenderizes, moistens and adds deep flavor, so you end up with skinless grilled chicken that's as delicious as it is nutritionally correct. Serve with soft pita or Arab flatbread and fresh yogurt.
Put the salt in a wide, shallow non-reactive bowl with the garlic and mash them together until you have paste. Add yogurt, lemon and pepper. Skin the chicken breasts, remove all visible fat and separate the halves. Bend each backward to break the bones so the pieces win lie flat. Add to the yogurt and turn so all surfaces are well-coated. Cover the bowl tightly and refrigerate. Allow to marinate at least overnight, up to a day and a half. Turn when you think of it. To cook, remove breasts from marinade and wipe off all but a thin film. Broil or grill about 6 inches from the heat for 6 to 8 minutes a side, or until thoroughly cooked. Meat will brown somewhat but should not char. Serve at once.

Jamie Oliver: I'll Cook For Soldiers In Afghanistan
Mar 3 2008 JAMIE Oliver last night agreed to cook for soldiers in Afghanistan. The celebrity chef vowed to do what he could for frontline troops after Prince Harry suggested he help improve Army grub. Harry returned from a tour of Helmand with a challenge to Britain's cooks to come up with a bangers and mash option for those living on army ration packs out in the field. Harry said: "Bangers and mash with gravy, in a bag, would be brilliant. I don't think you can screw that up." Responding to the suggestion that Jamie might oblige, the prince said: "Yeah, Jamie, please." A spokesman for the chef said "It's very nice of the prince to think of Jamie first. "It's an honour and if we do get a phone call from the prince or anybody involved, we would do what we can."
