1. West African Cooking - Considered The Hottest Food In All Of Africa
West African Cooking is undoubtedly the hottest food on the African Continent, and the hot spices used are some of the most unusual and potent in the world.

West African Cooking
The Hottest Food in Africa
Spicy History of West African Cooking The chile was most likely was brought over to West Africa from Portugal in the 15th century. The African populations at that time readily accepted the new chile, as they were already familiar with hot spices. Cubeb pepper, grains of paradise, and Ashanti pepper were regularly used in West Africa cooking. Prior to the arrival of the Portuguese in West Africa, there is very little mention of spices in the diets of medieval Arabic people in this region. There is mention, however, of a "Sudan pepper" in Morocco. This was probably Ashanti pepper or cubeb, a variety of pepper known for its hotness. Ashanti was cultivated in places on the Guinea coast before the Portuguese arrival. There is also evidence that some spices were imported from North Africa, as told by Arabic travelers in the 16th century. In today's West Africa society, you will find the spiciest food of anywhere else in Continent of Africa. East, Southern, and Central Africa have mostly bland cooking in comparison, with the exception of Cameroon, Gabon, and the Congos. Some say these regions have even hotter food than West Africa. There are also areas of Angola in the southwest part of the continent, and Mozambique in the southeast that are spicy areas. Portuguese colonies have brought that influence to those locations. Spicy West African cooking refers to the cooking of Gambia, Guinea, Guinea-Bissou,Senegal, Mali, Liberia, Ivory Coast, Siera Leone, Ghana,Togo, Nigeria, Benin, and Burkina Faso. Oddly enough, in the southern parts of all of these countries, the food is hotter than the northern parts.

The African kitchen is traditionally outside or in a separate building apart from the sleeping and living quarters. By far the most traditional and to this day the most common sight in an African kitchen is a large swing blackpots filled with meat, vegetables, and spices simmering over a fire. The pot usually sits on three stones arranged in a triangle, and the fire slowly consumes three pieces of wood that meet at a point under the pot.

Some of the recipes contained in the Afri Chef African Recipes cookbook are the same as those eaten and enjoyed by Africans many years ago. Except in limited instances, where fresh vegetables have been substituted by canned, these African recipes stay true to the originals, We can imagine the significance a last meal as a free person could have had to someone, before his world was destroyed, before the slave chains were locked on his, or her, wrists and ankles.
The new slaves faced unimaginable horrors; deprived of their freedom, displaced and despairing, transported between decks under appalling conditions, to face forced labor on the plantations of the new World and Caribbean. Everything was unfamiliar and threatening. They had nothing to fall back on.
In this strange new world, the slaves sought solace by remembering home. They were aided in this by cooking their traditional foods, sometimes adapting their ethnic African recipes to include new ingredients found in their new surroundings. This saw the start of

The open-air market of Addis is the largest and most exciting in all of Africa. The market seems to stretch for miles. Everything is on display, from clothing and household wares to treadle sewing machines. And the food! Women sit cross-legged on the ground with tiny scales to measure spices for the Wat-the stews cooked in every home. Grains, called Tef, in huge bags are ready for the housewives who make Injerathe unleavened bread prepared today as it was a thousand years ago. African Recipes
