  • Lemon zest with small amounts of fresh ginger. Approximately ½ Tbs. combination total for 1 lemongrass stalk. A few leaves of lemon balm or lemon leaves. Approximately 2 leaves for 1 lemongrass stalk.
Do I really need to use a wok when stir-frying?
You do not need a wok to be a stir-fry master. A large skillet will do the trick. However, woks are ideal for Asian cooking because of their concave shape - it prevents the food from flying out of the pan. Another great thing about woks or any non-stick finish pan is that they need less oil, so it's a healthier way to cook.
How long do I need to soak my rice noodles?
The traditional method is to soak the dried rice noodles in room temperature water for at least 1 hour or even overnight. After 1 hour, they should be soft, firm but flexible. Drain the water before using. At this point they are ready for cooking. However, for quick preparation, just bring enough water to a boil to cover the noodles. Turn off heat and immerse rice noodles in hot water for 3-7 minutes until noodles are soft but still firm. Rinse with cold water for 30 seconds and drain well.

We are grouping them together for our World Studies International Recipes but feel free to focus on one country at a time in your cooking adventures.
Asian Cooking: Facts about Asia
Asia's biggest crop is rice. It is a staple food in Asia, meaning it is something they eat often. Other common Asian ingredients are fish, squid, shrimp, and octopus. The countries of Asia lie mostly within ocean, seas or rivers so fish is easily accessible. Some Asian spices and cooking ingredients are chili pepper, garlic, coconut, soy sauce and ginger.
There are different variety and tastes throughout Asia.
  • Szechuan comes from West China and includes a mix of spicy, sweet, sour and salty flavors of Chinese recipes.
    Vietnam is known for light and healthy dishes.
    Indonesia is known for cooking with seafood and coconut milk. Two things readily available.
    Cantonese is known for dim sum.

Hey all
I'm looking to make some gluten-free things for my grandmother, but I have very little experience with gluten-free baking.
1) Dinner rolls
2) Traditional pie crust
3) Sandwich bread
Does anyone have some tried and true recipes for these items? I'm looking for things that come out as similar to their all purpose flour counterparts as possible. The first two are for Thanksgiving, but the latter is for my grandmother's freezer. She says she's had limited luck finding any gluten-free sandwich breads she enjoys, and she likes to make sandwiches for her lunch.

I'm trying to re-construct a recipe my mother used to make.
She used leftover pork roast Granny Smith apples Campbell's cream of mushroom soup (hey, it was the 50's) and outside of Lawry salt, pepper, garlic powder and brown sugar I can't remember anything else cinnamon may have been used This was a savory sweet dish that could be served as is or actually put into a pie crust or served over hearty slices of pumpernickel.

Once A Month Cooking Starter Recipes
The following recipes are great to begin your experiences with OAMC! One thing to remember, is do not make recipes in bulk (more than one meal) for your freezer if you have not 'test driven' them on your family first. 1 can Tomatoes with Green Chilis 1 clove Garlic minced 2 tablespoon Chili Powder 1 tablespoon Chicken Broth 12 Corn Tortillas torn into quarters Serves 6 (When freezing, put in freezer after assembling casserole, and bake when ready to eat.)
