Formerly Matuba now called Maruko Japanese Cuisine
Located in Arlington Virginia. A small but, quaint Japanese restaurant. I highly recommend it. The sushi is fresh and is excellent in my opinion.
Their lunch menu offers all you can eat salad bar as long as you order an entree. They also offer bento boxes during their lunch time. For those of you who do not know what "bento boxes" are, your food is separated in different compartments. You normally get rice, tempura, cucumber salad, chicken teriyaki and california rolls. Very cute in presentation and very filling.

"Pad Thai" Restaurant Fairfax, VA
I highly recommend this place. It is small but, the chef knows how to cook! If you love Thai food or willing to try it , it is a great place to eat.   • Choosing a Chinese or Asian Cooking Class There are as many types of cooking classes as there are international cuisines. You may find yourself in a small, intimate setting, free to question the instructor at will. Or you may be seated with fifty other foodies, watching the chef do his thing from an elevated dais at the front of the room. Either way, a cooking class is a great way to learn more about a particular cuisine. Here are a few of my more memorable one-day cooking class experiences: "Flavors of Southeast Asia"
    This was a half-day course featuring chef Nathan Hyam, author of Simply Thai . Hyam introduced us to five popular Southeast Asian dishes, beginning with Cantonese potstickers - complete with dipping sauce - and finishing with Singapore Curried Rice Noodles. Hyam taught the course in the basement of a local cooking store specifically adapted for this purpose. Long tables were set out in rows. Low lighting and elegant place settings heightened the sense of intimacy. The crystal wine glasses beside each plate raised my hopes that something a little stronger than coffee would be served.

    Citrus flavors are important to Asian and Chinese cooking. And no wonder! Historians believe that all citrus except grapefruit had its origins in the Orient. The juicy oranges we eat today were once a sour fruit growing wild in China. Satsuma tangerines were first cultivated in Japan, limes are native to Malaysia, lemons come from India and pummelos have been popular throughout Asia for centuries.
    While there are many Asian cultures, Martin's virtual tour explores these two basic categories.
    Southeast style includes the foods of Thailand, Laos, Cambodia, Vietnam, Indonesia, Malaysia and Singapore. The focus is on aromatic foods prepared with a light touch using citrus juices, basil, cilantro and mint. Lemongrass and the pungent fish sauce, naam plaa, are also prominent flavors.
    Northeast style includes China, Korea and Japan. Food here goes beyond the table; it also figures prominently in medicine and rituals. Fats, oils and sauces are often used. Because it covers such an enormous area, there are several variations in the way foods are flavored and prepared between the northern and southern regions.
    So pack your chopsticks and come along as Martin Yan takes you on a wok through Asia!

    3 CUPS ONIONS (Diced 1/4" pieces)
    3 CUPS CELERY (Chopped)
    3 CUPS BELL PEPPERS (Diced 1/4" pieces)
    1/2 CUP TOMATO PASTE
    1/2 CUP FRESH MINCED GARLIC
    5 LBS FRESH PORK SAUSAGE BREAKFAST LINKS (Cut each link into 3 pieces)
    1 TSP WHOLE THYME LEAVES
    1 TBSP SWEET BASIL
    1 TBSP BLACK PEPPER 4 WHOLE BAY LEAVES 1 TSP GROUND CAYENNE PEPPER 1 TBSP KITCHEN BOUQUET 2 CUPS CRUSHED TOMATO FILLETS 1-1/4 GALLON SEAFOOD or SHRIMP STOCK (See recipe) 1-1/2 LBS CATFISH FILLETS (Shanks no bellies or bones) 6 MEDIUM GUMBO CRABS (Cleaned and split in half) 1 TBSP GUMBO FILE' 1 QUART OYSTERS 3 LBS FRESH SHRIMP (Peeled and deveined 31 - 35 count) Method Use a braiser or 20 quart stock pot and over high heat, whisk the roux 3 - 5 minutes. Add the onions, celery, bell pepper, tomato paste and garlic to the roux and simmer over medium low heat until all vegetables are very limp. About 30 minutes. Meanwhile, bake sausage (uncovered) in a 350F oven for 30 minutes. Discard grease, then add sausage and any graton to the gumbo.

    in 350 deg. oven for 30 - 40 min. until heated through.
