  • Peel potatoes Slice potatoes into thin straw-like pieces. Wash well with water to remove excess starch. Place fries in a pan with water and simmer/par boil on the stove for about 15 mins. Sieve and dry fries off. Deep fry at 175°C in vegetable oil or lard/dripping for 4 to 5 minutes to a light golden crisp. Remove and place on plate with paper towels to absorb the leftover cooking oil. Transfer to another plate if necessary. Add salt and shake to ensure all French fries are evenly salted.

    • Vary the size of the potato slices. Thick wedge shapes become Home Style Fries or English Style Chips, while thinly julienned potatoes make for Shoestring Potatoes. Cooking times will need to be adjusted.

      After studying the mysteries of mussels and chips, preferred by Belgian singer Jacques Brel and the late Queen frontman Freddy Mercury's curried chicken, Flemish chef Jeroen Meus heads next week to southern Germany. The 30-year-old cook catches some trout in Bavaria, and then heads to Hitler's "Eagle's Nest" to whip up the "meal of an atrocious man" as part of a "succulent feast", Flemish VRT television said on its Internet site.
      The chief editor of Antwerp's Joods Actueel Jewish community magazine, Michael Freilich, denounced the programme in advance for "presenting Hitler as a simple man of the people."
