Fall Bread Baking - Hands on Breads Cooking Class
Oct 9, 2010 10:30 am - 2 pm. Super Sticky Buns, Banana Walnut Bread, Parker House rolls, Cheddar Cream Biscuits. We will have Soup with our bread for lunch. Limit 8 Students. Hands On Style. Bring a friend and you will receive 1/2 off your class tuition. Classes are designed and taught by Susie Cork, who is also the General Manager of Shaw's. Susie is a graduate of The Culinary School at Kendall College in Chicago and honed her skills at Chicago's top restaurants for 17 years, including Ambria of the Lettuce Entertain You restaurants. One Loaf of Yeast Bread can be made at a time, and quickly, if the proportion of yeast is increased. Any Baking Powder Mixture can be mixed in the desired quantity, and almost any kind of loaf can be made with it - white whole wheat, graham, oatmeal, bran, nut , raisin, etc. Baked in a small pan, these loaves will be used up before they are dry. Biscuits and Muffins are the ideal home made bread for the small family. Pancakes and Waffles are always possible, and may be served as breakfast or luncheon breads, as accompaniments to meat or chicken , or as a dessert , with fruit , honey, maple sirup or a sauce . With a table griddle or iron they can be cooked in the dining-room and served piping hot.

Posted by punamytsike My Page ) on Mon, Oct 20, 08 at 9:14 I am getting really obsessed with making bread and having tons of fun, not to mention lots of good tasting ones, even if they always do not come out looking perfect ;) Yesterday I tried my first Artisan bread. My DH said that it was the best one I had made this far and it did taste really good but instead of being nice loaf, it remained flat and skinny. It did double the size on the pan for the last rise but instead of rising up, it just spread out. Any idea what might have gone wrong? Can artisan breads be baked in the the bread pan to get a nice shape? In case I can, do I need to adjust baking temp and time compared to the recipe? Thanks for any input :) Follow-Up Postings:

Fold the dough back over itself, turn about a quarter of a turn, then press again. Repeat this process for the specified time, which may be anywhere from 5 to 20 minutes. Well-kneaded dough should feel smooth and elastic. Press your fingertip into the dough; it should spring back. Follow recipe instructions for rising, forming, and baking.

  • If dough is too sticky, incorporate a little more flour as you knead, taking care not to add too much.
