Festival Breads
Traditionally, festival breads were prepared to denote a special observance of religious or national importance. Some breads were made only once a year, while others were baked weekly, however many of the once-a-year breads are now being offered year round by a greater number of commercial bakers. Most festival breads are made with many ingredients that enrich and flavor the bread and the preparation is often more time consuming for the home cook than other types of bread.
Bolo-Rei
Country or region of origin: Portugal Type of flour used: white flour (wheat) - usually white bread flour or all-purpose flour Description: A Portuguese yeast bread that is traditionally served to celebrate Epiphany. The dough is enriched with butter and eggs, flavored with raisins, pine nuts, and orange and lemon zest, and topped with candied fruits, sugar, and citrus zest. It is formed into a large ring shape and baked until golden. It is the custom to insert a dried bean and a small coin or gift into the dough before baking. Whoever receives the slice of bread containing the bean is the person designated to make the bread the following year. A similar recipe known as "Twelfth Night Bread" is the Spanish version of the bread.

    Kneading Breads
    in Kneading is a crucial step in gluten development for breads, basically making them elastic and springy. For a standard yeast bread, gather well-blended dough on countertop and keep extra flour handy. With the heel of your hand, push the dough into the countertop away from you and fold it back over itself toward you, adding a bit more flour only as needed. Turn 90 degrees and repeat. Continue doing this until the dough is smooth and elastic, usually 10 to 15 minutes. A good test is poking the dough with your finger; it should spring back. Also, try gently stretching the dough between your hands – it should not tear at all. Once you've finished kneading, most recipes will require you to cover the dough and let rise once or twice. Quick breads are basically breads made without yeast, that are quick-risen by baking soda or powder or, sometimes, just the air that is beat into eggs or a dough. Irish soda bread is probably the most famous example of real bread (as opposed to muffin or tea bread) made with this method, but there are many others. Soda bread

    Quick bread refers to breads that require minimal preparation time, are made from batter more often than from dough, and are leavened with chemical agents, such as baking soda or baking powder, instead of yeast or natural starters. The chemical leavening agents react quickly when combined with liquid ingredients, causing the batter or dough to begin rising immediately, so for many quick bread recipes, the wet and dry ingredients are mixed separately and then combined just before baking. The batter for some quick breads is often thin enough to be poured into loaf pans, muffin tins, or other molds for shaping the final result, while the ingredients for other quick breads form a more dough-like consistency, requiring a short kneading time before baking.
