1 pound stew meat or round steak (trimmed and cut up) 1 package dry onion soup mix Two 10-ounce cans of cream of mushroom soup 2 cups of fresh mushrooms or two 4-ounce cans drained mushrooms 1/2 cup of red wine 1 cup sour cream
Place meat, onion soup mix, cream of mushroom soup, mushrooms, and wine in Dutch oven. Bake all afternoon well-covered at 200 to 250 degrees. Allow at least three hours. The lower the temperature, the longer it cooks, the more tender the results. Add one cup sour cream at serving time. Serve over noodles or rice. This recipe is a favorite with the wranglers, cooks and guests. It's easy to put together, easy to increase, and always turns out perfect! It's great to serve with fresh bread, fresh tossed salad and

I became interested in scout cooking after seeing my son's patrols menu for an upcoming outing. I knew there had to be more to scout cooking than beans and franks, sandwiches and cold cereal. I started with two recipes for Dutch oven cooking. I now have assembled a book with about 200 recipes for Dutch ovens. My son has even competed in a few cooking events now.

CAMP OVEN COOKING
Cast iron camp ovens are fun and a time-proven way to cook a variety of food including breads, roasts, stews and casseroles. Camp ovens come in various sizes and a good one will last a lifetime if cared for. Most camp stores carry good quality ovens but look for one that has a strong handle and a lid with a large lip to hold the coals. Before using a camp oven and to prevent rust it needs to be "seasoned". The first step with a new cast iron camp oven is to peel off any labels and then wash the oven and lid in warm water only, rinse and dry completely. Grease the oven and lid inside and out with a good grade of olive or vegetable oil. Do not use lard or other animal products as they will spoil and turn rancid. Do not use a spray in coating the oven but rather use oil soaked in a paper towel. Place the oven upside down on an oven rack with the lid separate and place aluminium foil underneath to catch any excess oil. Bake at 300-350 degree oven heat for at least an hour. You will probably need to repeat the process for the oven to obtain the desired uniform black patina that provides the non-stick qualities and protects your oven from rust.

INTRODUCTION
The reason for this book is to provide reference material for an individual who is planning or cooking a meal for six to ten people. For larger groups, most of the recipes can be easily doubled or tripled and two or more dutch ovens may be needed. Most of the information has been targeted toward the first time dutch oven user, although, the more experienced cook may find a tidbit or two here and there. I hope this book will entice all of you potential dutch oven cooks to "giv 'er a try" and you will see why I call them "man's best friend". If you wish to contribute to the growing of this book, please send your favourite recipes to me at the following address and I will give you and your troop credit in the next issue: Mike Audleman

Camping Cooking
12 CAMPING MEAL AND GRUB IDEAS Most of the recipes I use when camping can incorporate canned or dry ingredients instead of fresh ones, depending on your circumstances and ability to properly store fresh food. Dry milk, canned meats and vegetables, instant potatoes, dehydrated onions, biscuit mix, butter buds and dry eggs can be effectively substituted to make delicious meals. I can prepare all my meals in a Dutch oven, over any heat source. I rarely measure because I take as little as possible on camp trips. Add or subtract ingredients as you see fit to make the meal palatable to you and to feed as many (or few) people as necessary.

Jazzed-Up Peach Cake Recipe
Sharing recipes and cooking tips is a big part of our daily life, as I generally cook every day, and we usually have friends over to eat with us. I recently baked a cake poolside and our friends could not believe such a moist, dense cake came out of a box! So, I thought I'd share my secret in this quick video. To bake your cake on a gas grill, it's best to have 3 or 4 burners. Turn on the two outside burners and heat to 350°. Use an oven-safe baking dish (I use silicone) in the middle - not over direct heat - and bake about 35-40 mins. Just keep an eye on the temp, and adjust to maintain 350°.
