I was perusing Kevin's Seriously Good and read that he and Cookiecrumb of I'm Mad and I Eat had partnered up for some cooking. The dish? You guessed it, macky cheese. I was in and yesterday was the deadline. I'm a day late and 2 pounds fatter. Oh well, what can you do?
There was no question what I wanted in my cheesy love. There had to be lots of cheese, powdered mustard, paprika or cayenne, lots of butter and a crunchy topping. But I needed a recipe. Yes, even Biggles finds the need from time to time. I remember Alton Brown and his show dedicated to nothing but. Oh shaddap, no I'm no Food Network junkie. I do love my tv though, more than a man should. In any case, AB is the only reason I tune over there to channel 221. I like him and I enjoy his ways, so there. Nyah. Here's a list of ingredients you'll be wantin'. 1/2 pound elbow mac
3 TBS butter
3 TBS flour
1 TBS powdered mustard

    • Chill cheese for easy grating and shredding. It'll make the job much easier. Chill hard cheeses in the freezer for 30 minutes and soft cheeses for 15 to 20 minutes, or until firm to the touch. If you want to crumble hard cheese, freeze it longer. (Cheese will keep in the freezer, tightly wrapped, for two to three months.) Measure cheese for cooking by weight for best result in recipes. General rule is 4 ounces of cheese equals one cup shredded or grated. When your recipe calls for two cups of grated cheese, our 8-ounce stick cheeses will be just the right amount. Similar types of cheese can be used interchangeably in recipes to give you the flavor you enjoy the most. For instance, when a recipe calls for cheddar, use mild or sharp cheddar for a mild flavor. For a bolder cheddar flavor, use extra sharp, which is aged longer giving it a drier, stronger taste. And don't overlook Washed Curd. It melts creamy smooth and tastes similar to sharp cheddar. To cook or reheat dishes with cheese in the microwave, use the lower power settings and stir and rotate frequently. Cheese is best when heated slowly at low temperatures. To soften cheese in the microwave, remove wrapper, place on microwave safe plate, and heat on low to medium power. An 8-ounce piece of hard cheese will take about 30 seconds to come to room temperature.

The following tips How to Soften Cream Cheese: Place a completely unwrapped package of block cream cheese, either regular or light cream cheese, in microwaveable bowl. Microwave on HIGH for 30 to 45 seconds or just until softened. Add 15 seconds for each additional block of cream cheese. Alternately, leave your cream cheese, wrapped, out at room temperature for about an hour before using. How to Safely Store Cream Cheese-Frosted Cakes: Cakes filled and/or frosted with cream cheese icing should be stored in the refrigerator. But you knew that already Freezing is not recommended. How to store a block of Cream Cheese: Cream cheese in a block can easily go to waste if not stored correctly. It is easy to store your block cream cheese by simply keeping it in your refrigerator. For blocks that have been opened, rewrap tightly in plastic wrap. Freezing is not recommended. Lower Fat Options: To make your cheesecake that little bit lower in fat, replace your regular cream cheese with a block of light cream cheese, try margarine suitable for cooking instead of butter, swap full fat biscuits for low fat ones, and serve decorated with fresh fruit. Delicious on the lips AND lighter on the hips!

    Master Cheesemaker Sid Cook at Carr Valley Cheese has once again master minded yet another way to make more people fall in love with his cheese: he's running a series of cooking schools at his brand new test kitchen at his Sauk City, Wisconsin retail store.
    A series of 14 classes with local celebrity chefs started in January and classes have been selling out weeks in advance. When I was there buying cheese on Saturday, Sid was in fine form - sampling his many American Originals before the class and then introducing Chef James Van Deurzen of Mazomanie to a sold-out crowd. Van has been voted one of Madison's five top home chefs by Madison Magazine. His "Seafood Extravaganza" looked to be a real hit.
    I was so inspired by the experience that I signed up for a class myself on April 23 with Tom Gresser of the Roxbury Tavern. I've been trying to eat at the Roxbury for years - it's the type of rustic tavern where the food is legendary but whenever I make the 45-minute trip to the middle-of-nowhere destination, I seem to arrive only to find a "gone fishing" or "family wedding" sign on the front screen door and the place is closed. Long sigh.
    So I figure if I get to meet Tom at the Carr Valley Cooking School and eat his famous Swiss cheese appetizers, Gonzoburger, Chili Rellenos, French Onion torched soup, it's almost like eating at the Roxbury, right? Or maybe it will at least add to the mystique of my experiences in repeatedly attempting to dine there.

    Grilled Cheese is one of the easiest and tastiest snacks around. So grab your favorite cheese and some bread and get ready to cook! INGREDIENTS:
    2 slices of your favorite bread
    1 T softened butter
    3-4 slices of your favorite cheese
    ham
    pineapple slices
    sliced tomatoes
    onion
    TOOLS:
    knife
    griddle, frying pan or skillet spatula serving plate REMEMBER THAT IT'S IMPORTANT TO ALWAYS COOK UNDER ADULT SUPERVISION. SOMETIMES WE USE OBJECTS THAT COULD BE HARMFUL, LIKE A KNIFE, SO DON'T EVER ATTEMPT TO DO THESE RECIPES ALONE.
  • Spread butter on one side of 4 slices of bread. Heat a griddle to medium high. If you don’t have a griddle you can use a frying pan or skillet; it will work just as well. Place bread, butter side down on griddle. Place cheese on 2 of the slices of bread. Add your favorite toppings (ham, pineapple, tomatoes, onion, etc.) for the next layer. Put the last 2 slices on top. As the bottom slice begins to get golden and crispy, carefully flip sandwich over. Press down on the crispy golden side with your spatula so that the sandwich comes together with the melted cheese. When the cheese is melted and gooey and the bottom slice is golden, your sandwich is ready! Carefully remove the sandwich with a spatula, cut it in half, and serve with fresh fruit or your favorite hot soup.
