Microwave ovens are safe to use for defrosting, reheating, and cooking. However "cold spots" can occur in microwaved foods because of the irregular way the microwaves enter the oven and are absorbed by the food. If food does not cook evenly, bacteria may survive and cause food-borne illness. Simple techniques to minimize the cold spots include stirring and rotating the food once or twice during microwaving, arranging foods uniformly in a covered dish, and turning large foods upside down during cooking. When defrosting food in the microwave, remove food from store wrap first. Foam trays and plastic wraps may melt and cause chemicals to migrate into the food. Never stuff a bird that will be cooked in a microwave because it may not cook thoroughly. Wax paper, oven cooking bags, parchment paper and white microwave paper towels are safe for microwave use. Never use brown grocery bags, newspaper, metal, or foil in the microwave. To ensure a more even distribution of heat when cooking large pieces of meat in the microwave, first, remove the bone, cook on medium power (50%) for longer periods of time, and rotate once or twice during cooking .

    • Wash the asparagus Break off the ends by bending it like you would bend a bow.  Place asparagus in a plate with several spoons of water.  Cover the plate with plastic food wrapper but leave some opening at the side so extra hot steam has a way to escape.  Microwave for 5 minutes. 
    Notes
    When you bend the asparagus like a bow, the ends will break off naturally. Asparagus dries up from the end. Naturally when you bend the asparagus, the dry part will automatically break off. The fresher the asparagus the smaller the piece that will break off. Timing of microwave oven will be different depends on the power output of your microwave. Experiment and get the best result you want.

My hubby keeps looking in the cookbook, and asks "when will you cook this recipe?" My microwave was a gift for my 30th birthday, which makes it an oldie, but a goodie.     Sheer Heaven.
    • 1 acorn squash
    • 1/4 cup firmly packed brown sugar
    • 3/4 teaspoon ground cinnamon
    • 1 teaspoon cornstarch
    • 1/4 teaspoon salt
    • 1 cup thawed, well drained fresh
      or frozen blueberries
    • 3/4 cup finely diced apple
    • 1 Tablespoon margarine or butter
    Cut squash in half lengthwise and remove seeds. Place squash, hollow side up in a baking dish and cover with plastic wrap. Microwave 10 minutes. Carefully fold back plastic wrap, squash should be fork-tender. Let stand, covered, while preparing fruit.
    In a small bowl, combine brown sugar, cinnamon, salt, cornstarch, blend well. Stir in blueberries and apple pieces. Microwave, uncovered, for 2 minutes (stirring after 1 minute), or until sauce is slightly thickened. Stir in margerine.
    Fill each squash cavity with blueberry-apple sauce and serve. Sheer Heaven!!!
