Today’s Cordon Bleu is a modern, international school that welcomes students and visitors from around the world. The building buzzes with the young chefs of tomorrow slaving away for their diplomas, and tourists who’ve come for the hands-on pastry and cooking workshops, wine-tasting classes or the weekly Chef’s Secrets demonstrations. Geared toward all ability levels, the classes are relaxed, with silver-haired chefs in tall white hats often cracking jokes that leave the translators blushing. Even if you’re an absolute beginner in the kitchen, it’s worth the trip, especially for the €39 demonstrations that include a tasting with wine at the end. Chapter XI.
FISH
THE meat of fish is the animal food next in importance to that of birds and mammals. Fish meat, with but few exceptions, is less stimulating and nourishing than meat of other animals, but is usually easier of digestion. Salmon, mackerel, and eels are exceptions to these rules, and should not be eaten by those of weak digestion. White fish, on account of their easy digestibllity, are especially desirable for those of sedentary habits. Fish is not recommended for brain-workers on account of the large amount of phosphorus (an element abounding largely in nerve tissue) which it contains, but because of its easy digestibility. It is a conceded fact that many fish contain less of this element than meat. Fish meat is generally considered cheaper than meat of other animals. This is true when compared with the better cuts of meat, but not so when compared with cheaper cuts.

The menus presented here are from the world-famous cooking school in Paris: Le Cordon Bleu . Many of the recipes given here are thaught at Le Cordon Bleu by a team of master chefs from France's various Michelin-star restaurants. Each year, these chefs train students from more than fifty different countries, combining time-honoured traditions with the latest, most sophisticated techniques. Today, you are the star of the restaurant. Let the master chefs initiate the amateur chefs in the fundamentals and philosophy of classical french cuisine and guide the professionals in advanced techniques of french cooking. The history of Le Cordon Bleu stretches a period of almost hundred years; the first cookery class was held on January 14, 1896, in Paris's Palais Royal. The restaurant has a list of seven full menus available. You can pick any of them to start your tour in L'Art Culinaire. Please note that these recipes are a selection of a complete book (Le Cordon Bleu at Home), and therefore, may be too difficult for an amateur to start with. Chapter XIII.
LAMB AND MUTTON
LAMB is the name given to the meat of lambs; mutton, to the meat of sheep. Lamb, coming as it does from the young creature, is immature, and less nutritious than mutton. The flesh of mutton ranks with the flesh of beef in nutritive value and digestibility. The fat of mutton, on account of its larger percentage of stearic acid, is more difficult of digestion than the fat of beef. Lamb may be eaten soon after the animal is killed and dressed; mutton must hang to ripen. Good mutton comes from a sheep about three years old, and should hang from two to three weeks. The English South Down Mutton is cut from creatures even older than three years. Young lamb, when killed from six weeks to three months old, is called spring lamb, and appears in the market as early as the last of January, but is very scarce until March. Lamb one year old is called a yearling. Many object to the strong flavor of mutton; this is greatly overcome by removing the pink skin and trimming off superfluous fat.

Chapter XXXIV.
IN preparing bread for sandwiches, cut slices as thinly as possible, and remove crusts. If butter is used, cream the butter, and spread bread before cutting from loaf. Spread half the slices with mixture to be used for filling, cover with remaining pieces, and cut in squares, oblongs, or triangles. If sandwiches are shaped with round or fancy cutters, bread should be shaped before spreading, that there may be no waste of butter. Sandwiches which are prepared several hours before serving-time may be kept fresh and moist by wrapping in a napkin wrung as dry as possible out of hot water, and keeping in a cool place. Paraffine paper is often used for the same purpose. Bread for sandwiches cuts better when a day old. Serve sandwiches piled on a plate covered with a doiley.
