click for cuban recipes by Mayra L. Dole Most people who haven't tasted Cuban cuisine (such an elegant word) think our food is typically spicy. Wrong! We sure are spicy as a culture but when cooking we leave the tongue-stinging peppers to those flirting with gastrointestinal problems of astronomical proportions. Leave the hole in the stomach lining for other cultures, thank you very much. We'll stick to the artery clogging fried plantains, dense meat dishes with salsita, and overabundant plates of rich frijoles negros con arroz.
CUBAN SOFRITO
The main ingredient for almost every traditional Cuban dish is "sofrito," a sauté of onions, green peppers, garlic, oregano and bay leaves. I'm surprised we don't use sofrito in our deserts, but hey, we must keep some things sacred!
AFRO-CUBAN CUISINE: COMIDA CRIOLLA
Cuban cooking is influenced by Indigenous, African, Arabic, Chinese, Portuguese, and Spanish cultures. Our comida criolla, Creole food, is influenced by African and Spanish cultures. We Cubans don't concern ourselves with measuring anything, much like our Taino and Afro-Cuban ancestors. We seem to have been born knowing how much salt, water, or cumin to add to food. And as for timing, who cares? Who can't tell when a fricase de pollo is done, anyway? When you sniff the air and it smells exquisite, jam your finger into a piece of chicken, puncture it to the core, rip out a piece, taste it and make sure it's not pink inside. If it needs more salt, add it. This is the cooking method/skill I learned from Mami. She's the best Cuban cook in town!

Cuban cooking is a combination of African, Spanish and Natives cooking methods and ingredients. Spaniards brought many products to Cuba, among them the sesame seeds, cumin, peanuts, okra, rice, yams, corn, squash, sugar cane and others. To cook exactly as it appear on these pages is not the way a Cuban would do it. The recipes in these pages can be modified to your taste, if you are a cook and want to experiment then these pages are made for you. In the same way that the Spaniards introduced cumin to us, Africans introduced us to the culinary mortar, we use cumin in fishes, meat, soups, rice and with other foods. Garlic is one of the most common ingredients and is known around the world. Onions and peppers are also found in our recipes, Fruits and vegetable fried in oil are very popular in Africa. The amount of salt in the different recipes is optional since the other ingredients should suffice, but Cubans we always use it, but feel free to omit it if you wish

    Authentic Cuban recipes are served up from the melting pot of traditional recipes from the continents of South America, Africa, North America and Europe.     Dulce de Guayaba de Elsa

    Ingredients
    35-37 Medium ripe or green Guavas
    (NOTE: Guava will stain, so be careful of clothes and counter tops.)
    6 1/2 cups Sugar
    Pinch of Salt
    Water as needed
    Process:
    This recipe makes approximately eight 12 oz. jars.
  • Wash guavas and cut off the stem end.
  • Cut the guavas in half and scoop out the seed and centers and reserve.
  • Chunk the remaining guava pulp and skins. Puree the chunked pulp and skins adding small amounts of water as needed to liquefy.

    Herald Staff Writer Cuban culinary guru Nitza Villapol who taught generations of Cubans how to
    cook and, in the last decades, how to cope with a ration book and acute food
    shortages has died in Havana at age 74, Cuba's official press announced
    Tuesday. The circumstances of her death were not reported. Villapol was known for her cookbook Cocina al minuto (Cooking to Order),
    dubbed ``the bible of Cuban cuisine,'' and for her TV show of the same name. A
    Cuban Julia Child of sorts, she also starred on radio cooking shows and wrote at
    least two other books on Cuban cooking. In the 1950s, young brides took their cooking lessons from Villapol. Some of them
    later fled to exile in South Florida with their worn copies of Villapol's Cocina al
    minuto. Copies of the book reprinted in the United States without her
    permission, Villapol once complained still circulate in Spanish-language
