Cuban recipes share spices and techniques with Spanish and African cooking, with some Caribbean influence in spice and flavor. This results in a unique, interesting and flavorful blend of the several different cultural influences. A small, but noteworthy, Chinese influence can also be accounted for, mainly in the Havana area. During colonial times, Cuba was an important port for trade, and many Spaniards who lived there brought their culinary traditions along with them As a result of the colonization of Cuba by Spain , one of the main influences on the cuisine is from Spain. Along with Spain, other culinary influences include Africa, from the Africans that were brought to Cuba as slaves , and Dutch, from the French colonists that came to Cuba from Haiti . Another important factor is that Cuba itself is an island, making seafood something that greatly influences Cuban cuisine. Another contributing factor to Cuban cuisine is the fact that Cuba is in a

Fried Bread - Torrejas
Servings: 10 Ingredients:
  • 1 loaf of French bread (about 3 inches diameter), cut in 2 or 3 inch thick slices 1 tablespoon olive oil (not extra-virgin) 2 eggs, lightly beaten 1 cup evaporated milk 2 cups sugar ½ cup condensed milk 4½ cups water 1 cup half and half cream 1 2-inch piece cinnamon 2 cups milk 1 tablespoon Cognac 2 tablespoons vanilla ¼ pound sweet (unsalted) butter
  • Directions • Place the slices of bread in a rectangular glass dish. Although they may seem crowded, they will fall into place after being soaked in milk. Mix the milks and pour over the bread. Allow the bread to soak in the milk for 2 hours. • Remove the soaked bread carefully with a wide spatula. The bread will be very soft. Drain the bread on a wire rack over a pan. • Beat the eggs lightly. Heat the butter with the oil in a large skillet to frying temperature. Dip the bread slices in the egg and quickly transfer to the skillet. Fry until golden. Regulate the temperature of the butter so that the bread will fry though without burning. Add more butter as necessary. Drain on paper towels while preparing the syrup. • Stir the sugar into the 4½ cups water, add the stick of cinnamon and cook at low heat until the sugar has completely dissolved and the liquid becomes clear. Boil for a minute or two. Let cool before adding the optional Cognac. Remove the stick of cinnamon.

    dotted with flowing rivers and clear springs, and encircled by an ocean full of fish awed him.

This included ingredients such as cashews, cassava, corn, custard apples, guavas, icaco plums, peanuts, peppers, pineapples, pumpkins, sour sops, star apples, sweet potatoes and a number of other fruit and vegetables. Cuban expat Abel Hern ndez joined with Hunts Point food distributor Ricardo Duarte in 1989 to establish the Mi Bandera supermarket in heavily Cuban Union City. Three years later, Mi Bandera Restaurant took shape above the market, reached via elevator or a steep flight of steps. Everything about Mi Bandera is oversized. The setting is an arenalike dining area surrounded by open kitchens, blazing grills and faux tropical rooftops. Metal-back chairs are unforgiving, but the multinational clientele is too busy being fed and entertained to care.

    Published Wednesday, October 21, 1998, in the Miami Herald Cuban culinary guru Nitza Villapol who taught generations of Cubans how to cook and, in the last decades, how to cope with a ration book and acute food shortages has died in Havana at age 74, Cuba's official press announced Tuesday. The circumstances of her death were not reported. Villapol was known for her cookbook Cocina al minuto (Cooking to Order), dubbed ``the bible of Cuban cuisine,'' and for her TV show of the same name. A Cuban Julia Child of sorts, she also starred on radio cooking shows and wrote at least two other books on Cuban cooking. In the 1950s, young brides took their cooking lessons from Villapol. Some of them later fled to exile in South Florida with their worn copies of Villapol's Cocina al minuto. Copies of the book reprinted in the United States without her permission, Villapol once complained still circulate in Spanish-language bookstores in Miami-Dade County. A home economist, Villapol became well versed in making do with little while studying in wartime England. She put the skills to work decades later in what became her greatest challenge and a controversial role: teaching Cubans how to cook without meat, milk and a whole range of spices indispensable to traditional Cuban cooking.
