    Knedlíky (boiled and sliced dumplings ) are one of the mainstays of Czech cuisine and are quite often served with meals. They can be wheat or potato based, and are sometimes made from a combination of wheat flour and stale bread or rolls. I am of Czech descent, well except for some gypsy on the part of my fathers mother. She was very embarrassed about that. I was born during April of 1936 at a farmhouse near Leigh, Nebraska. I was the first born and I was the longest baby that the doctor had ever delivered. Six others came later but I was the only one born at home. The first winter and the first summer that I remember went on forever. Time has consistently flown by faster ever since. Living on a farm with the exception of salt, sugar, spices, flour, coffee we were self sufficient. My mother always had a large garden where she grew all manner of vegetables. She also liked flowers and had large numbers of them around the house. We also raised our own animals for meat. When I was young the meat that was not smoked was all bottled. Then later we had large freezers where we kept most of the meat and some fruit and vegetables. My parents enjoyed fish and for a time we would order a 100 pound crate of cod fish. Eventually a neighbor followed our example and bought from the same supplier. One time they were shipped a crate of salmon which they disliked. My parents quickly ordered another crate of cod and exchanged with them.

Best of Czech Cooking Book offers taste of Czech cuisine Review and photos by Karl Wells Special to The Telegram I cant remember exactly how I came to own the new paperback edition of Peter Trnkas The Best of Czech Cooking (expanded edition). Lately Ive been buying a lot of books about ethnic food, so I wasnt surprised when I saw it sticking out of a pile of new purchases. What did pleasantly surprise me was the discovery that The Best of Czech Cooking (Hippocrene Books Inc.) was authored by someone who lives in St. Johns. As I was reading the quotations of praise on the back cover I scanned the single paragraph about the author: Peter Trnka was born in Prague, and lived in England, India, and the U.S. before moving to Canada. He teaches philosophy at Memorial University in Newfoundland and resides in St. Johns, Canada. Apparently, Trnka, who lives here with his wife and 4 children, has another food book in the works. His next will be on wild food. He credits his move to Newfoundland with piquing his interest in wild food, as he states in the preface to the expanded The Best of Czech Cooking The profusion of affordable hare (zajic), elk or moose, caribou or reindeer (dancy), and game birds such as grouse greatly extends the variety of meats available to the adventurous chef.

8 February 2010 Most Czech pubs pride themselves on featuring a few national specialties. Dishes like svíčková (roast beef in cream sauce), vepřo, knedlo, zelo (pork, dumplings and cabbage), guláš (beef stew), and soups like bramboračka (potato) are commodities as well known here as fish and chips are in England or hamburgers and French fries in the US. While a Czech pub menu can be predictable, the quality of these Czech standards is usually decent and prices are generally reasonable. However, tell babička that you’ve eaten svíčková in a pub, rather than in her home, and you’re likely to never hear the end of it. Eating meals in restaurants is a concept relatively new to the Czech Republic. My husband’s grandparents are always quick to remind us that we could have better, cheaper food at home. We resist explaining our reasons, knowing his family’s opinions on food are unchangeable. The ability to prepare traditional Czech food is an integral part of most Czech females’ cooking resumes, at least for those over 40. Surprisingly, many of my Czech contemporaries in their 30s or younger plead ignorance when it comes to preparing national specialties, citing that they don’t know the “proper” way to prepare such dishes. When I asked about a recipe for svíčková , my Czech girlfriend confessed that until recently she’d never even tried to make it because she assumed it was too difficult. Although my friend cooks regularly for her family, having lived abroad and traveled widely, she prepares a variety of international-style dishes instead of traditional Czech ones. Czech cooking and eating habits have started to look toward a healthier lifestyle, but traditional Czech recipes are still very popular and they tend to be high in calories. Sauces and condiments are popular as well. Czech cuisine has been influenced by Austrian and Hungarian cuisines. The national cuisine is based on ingredients that can be grown domestically, i.e. cereals, leguminous plants and potatoes. These are usually served with pork, beef or poultry and in some places, with fresh water fish.
Breakfast consists of white bread rolls or sliced bread accompanied by smoked meat products such as salami or sausages. Other food such as cheese, eggs or jam. With breakfast Czechs mostly drink tea with lemon, filtered coffee, hot chocolate or fruit juice. Lunch is often eaten at a favorite restaurant which offers a lunch menu for discount prices. Lunch usually consists of soup, a main course, and sometimes a small dessert. Dinner varies from home to home. Some prefer light dishes while others a heavy meal. More and more families are opting for fast food from take-away restaurants.
Most dishes are pork or beef but chicken, turkey, duck, lamb, rabbit and fresh water fish are also common. Czechs enjoy their sugar. Sauces, gravies and salad dressings are uncommonly sweet. A common meal for children is noodles with sugar, ground poppy seed and melted butter. The most common spices are caraway, poppy, paprika and dill. Condiments: mustard (smooth and grainy), tartar sauce, horseradish and sweet ketchup.
