Description:
Traditional Danish food is based around the natural bounty of the land, with fresh fish from the seas and rivers, and delicious pork and dairy products from the animals that graze on its fertile pastures. This beautiful guide to the culinary delights of Denmark includes all the classic favourites, many of which have been cooked in Danish homes for centuries. The Danish love of good food is an essential component in the national concept of hygge, a warm 'coziness' which is connected with home and family. Many of the recipes reflect this love of comfort, with dishes such as Roast Pork and Hassleback Potatoes, Chicken Soup with Dumplings, and Layer Cake with Cream. Lighter recipes in the book include some of the tempting pickled and smoked fish recipes that are so popular, as well as desserts for the summer, such as Red Berry Soup and Applesauce Cake.

    New Scandinavian Cooking
    From Denmark
A series of 13 new food and travel programs that bring Danish travel destinations, Danish produce and modern Danish cuisine to an international audience. Danish gastronomic entrepreneur Claus Meyer is to host New Scandinavian Cooking, which is a Nordic food and travel TV series targeting an international audience. The 13-program series is to be set in Denmarks most scenic locations and feature unique local produce, illustrious quality producers and unique personalities. The series highlights fascinating aspects of Danish cuisine, gastronomy and culture through amazing cooking, rich imagery and captivating narrative. "Ive joined this project because it offers a unique opportunity to bring international attention to the qualities of the Nordic kitchen. Its my expectation that the programs, apart from eulogising the good things we have to offer, will challenge people to adopt an innovative approach to foodstuffs and the experience economy as such and to develop smart solutions and products. For many years our targets have been set too low. Most produce has lost its sense of territory i.e. its sense of Nordic origin and the taste, air and qualities inherent in the Nordic ambiance, says Claus Meyer. Reaching viewers in 58 countries, New Scandinavian Cooking is one of the most popular TV formats within food and travel. Countries broadcasting the series include Germany, China, Italy, Australia, France and the Nordic countries. The first Danish program in the series is to be aired in the USA in January 2007 where New Scandinavian Cooking has already achieved a rating of 5 million viewers per program.

Sunday, November 14th 2010 Due to short summers and cold harsh winters, Danish cuisine is heavy and filling; much like other Scandanavian countries. Although some might say their cuisine is something to be desired compared to flamboyant foods from other countries, many of the dishes are great comfort food.Until the mid 19th century, Danish people had to rely on foods that could withstand the long winters; root vegetables, pickles or preserves, and smoked meats. Therefore many traditional dishes are based upon those types of ingredients. Pork, plums, cream, butter, carrots, potatoes, seafood, apples, onions, cheese, beer and bread are dominate ingredients in Danish cooking. Pickled herring is quite popular in Denmark. It is usually stored in vinegar or sour cream and placed on pieces of rye bread. Sometimes topped with sliced raw onions.
