Cabbage Pirog
Ingredients:
  • 3 cups flour
  • 1 lb. sweet butter, divided
  • 3/4 cup cold water
  • 2 tsp. salt, divided
  • 1 tbsp. rum or vodka
  • 2 lbs cabbage
  • 1 tsp. sugar
  • 3 hardboiled eggs, peeled and chopped
  • Milk
  • 1 egg yolk
Preparation:
To make the dough combine 3 cups flour with 1/2 lb. cold sweet butter (2 sticks), cutting it until the mixture resembles coarse crumbs. Mix together the 3/4 cup water, 1 tsp. salt, and the rum or vodka. Add this to the flour mixture and gently mix. Turn out onto a floured board and roll out dough into a rectangle about 1/2-inch thick. Fold into thirds, seal in a plastic bag and refrigerate for a few hours or overnight. Bring one stick butter (1/4-lb.) to room temperature. Roll out dough again to a thickness of 1/2-inch and spread butter on it. Fold into thirds and roll again. Fold the dough again, place in airtight plastic in refrigerator. Finely shred the cabbage as if you were making cole slaw. (Or you can use 3 bags of the already shredded cabbage that you can purchase at some supermarkets, but be sure the cabbage is very white and fresh.) Put cabbage in a pan with enough milk to cover 1/2 the depth of the cabbage. Add 1 tsp sugar and 1 tsp. salt. Mix gently and cook, uncovered, until soft. Drain cabbage well. Into the pan that you used to cook the cabbage, put the remaining 1 stick of butter and heat to melt. Add the cabbage and the chopped hard-boiled eggs.

2:00 – 4:30 pm Celebrate the end of summer with fabulous desserts made by Eric and Sanae. This class will show you have to make delicious and healthy seasonal fruit desserts. You will also get to taste everything Eric and Sanae make! The ingredients we use are all organic or non-sprayed brought at farmers markets or local natural food stores. Early Registration Fee : $50 (RSVP by 6 pm on August 21) Standard Fee: $65 RSVP: Email us your name and phone number by 6 pm on August 21. What to Bring: Please bring warm socks or indoor slippers as we ask everyone to take off shoes at the door, a pen and paper to take some notes, and a dinner plate and chopsticks or utensils of your choice (if you are planning to leave before we finish eating, bring Tupperware so that you can take it home). Cancellation Policy: Refunds can only be given if a cancellation notice is received by 6 pm on August 24. You may take a credit for another class (within 3 months) if a notice is received between 6 pm on August 24 and 6 pm on August 26. However, a refund or credit will not be given for a missed class or if a notice is received after 6 pm on August 26.

    Welcome to the world of authentic Russian cuisine and cooking recipes
    ussian cuisine is one of the most popular and widely spread in the world. French cuisine is festive and elegant, Chinese cuisine is exotic, Russian cuisine is healthy and delicious. Russian dishes are easy to cook and they do not demand much skill and special ingredients, they do not need exotic equipment and tool and everybody who knows how to hold a cooking knife and how to peel potatoes can cook delicious Russian dishes. What is the Russian food? One can say that Russian food is what Russians originally eat. However, the lunch of a person who lives in Moscow varies much from the lunch of a person who lives in Siberian countryside. The cities are always in a hurry and the fast food (piroshki, hot dogs, pelmeni) is the permanent leader there. In villages everything is cooked from scratch. Russians eat various dishes and traditional meals are not the only ones they like. Russia is mainly a northern country with long-lasting cold winter. The food should give them much energy and warmth to survive during the winter time. So, the essential components of Russian cuisine are those, which provide more carbohydrates and fat rather than proteins. Fresh fruits and vegetables are rarely used in food. So, the top six components of a Russian meal are: POTATO - (boiled, fried, baked, potato chops, potato pancakes, potato soup, mashed potato)
