    Dear readers I will be taking a break from my Finnish cooking adventures. My doctor has advised me to follow a low-fat diet, so baking and cooking in earnest is probably not a good idea for now.     Kurkkusalaatti - Cucumber Salad
    Is everyone "detoxing" today from all their Christmas feasts? We had a wonderful Christmas Eve and Christmas Day with some Finnish favorites, and also some non-Scandinavian treats too.
    One of the things that I made for our Christmas Eve buffet was Kurkkusalaatti or Cucumber Salad. This was a recipe from Beatrice Ojakangas "The Finnish Cookbook" and was highly recommended by my family friend's daughter, Lisa. We decided that it would be a nice refreshing counterpoint to the Swedish meatballs, smoked salmon, and Italian antipasti. And so it was!
    As a side note, since it is the middle of winter in New England, it is difficult to find fresh dill. However, I think that the fresh herb would have made the salad even better.

    VANILLA Listed below are the most typical vanilla products used in Finnish cooking and in the recipes of this site. See also: Vanilla bean Vanilla beans or pods are processed pods of a vanilla orchid plant (Vanilla planifolia) . These beans come in a form of thin, dark brown and fragrant, soft "sticks", about 10 - 20 cm long, enclosing thousands of tiny black seeds. In picture above: a whole vanilla bean (top) and a partially split vanilla bean with scraped out seeds (bottom). In cooking, always use vanilla beans that are sold whole. The beans are usually sold individually packed in small glass tubes. To extract their flavour, vanilla beans are used in many ways, either whole, split, powdered, with or without the seeds, with the seeds only, etc , just follow the instructions given in the recipe in question. After being used to flavour syrups, custards or sauces, whole vanilla beans can be rinsed under running water, dried and used again for two to three times. Store the beans in a dry place in an airtight container. VANILLA BEAN SUBSTITUTES Vanilla extract or essence Vanilla extracts and essences are made by steeping vanilla beans in alcohol. However, some of these products may contain many additional ingredients and other flavours, so study the label closely. Real vanilla extract is usually labelled as "natural vanilla extract".

    SIDE DISH
    LANTTULAATIKKO (Rutabaga Casserole), Finnish
    Ingredients
    • 3 lbs. diced rutabagas 2 ozs. fine ground bread 1/2 cube butter 2 1/2 pro. syrup 1 egg 2 cups milk salt and pepper
    Preparation Instructions Cook rutabaga in slightly salted water until tender; mash. Add butter, milk, bread crumbs; beaten egg, and seasoning; mix well, Place in buttered casserole, decorate top by scoring with a knife; sprinkle bread crumbs on top.
