The Department of Food Science and Human Nutrition has partnered with MSU Extension (MSUE) and the National Food Safety and Toxicology Center (NFSTC) to create the MSU Food Safety Area of Expertise Team (MSU Food Safety AoE). The Food Safety AoE is a self-directed group composed of MSU faculty from the department (Bourquin, Booren, Dolan, Partridge, Occeña-Po and Weir-Pisano) and the NFSTC, as well as Extension educators from the counties. Its official Web site is the Food Domain, a comprehensive resource on food, food safety and nutrition. The Food Safety AoE has three working groups:
  • Consumer Food Safety Education develops and disseminates research-based programs and resource materials on food safety for Michigan consumers; puts up food safety displays and engages in collaborative food safety initiatives with partners including NFSTC, the Michigan Department of Agriculture and the U.S. Food and Drug Administration. Professional Development conducts training programs for the food industry and MSUE staff, including Good Agricultural Practices (GAPs; pre-harvest food safety), Hazard Analysis and Critical Control Points (HACCP), Good Manufacturing Practices (GMPs),  and food safety programs for restaurants and retail food operations throughout the United States and internationally.

    The study of food science emphasises on the composition of foods and the changes that occur when they subjected to food processing. Functional foods are foods that promote health beyond providing basic nutrition. Our nutritional status, health, physical and mental faculties depend on the food we eat and how we eat it. Access to good quality food has been man's main endeavour from the earliest days of human existence. Safety of food is a basic requirement of food quality. "Food safety" implies absence or acceptable and safe levels of contaminants, adulterants, naturally occurring toxins or any other substance that may make food injurious to health on an acute or chronic basis. Food quality can be considered as a complex characteristic of food that determines its value or acceptability to consumers. Besides safety, quality attributes include: nutritional value; organoleptic properties such as appearance, colour, texture, taste; and functional properties. Food systems in developing countries are not always as well organised and developed as in the industrialised world. Moreover, problems of growing population, urbanisation, lack of resources to deal with pre- and post- harvest losses in food, and problems of environmental and food hygiene mean that food systems in developing countries continueto be stressed, adversely affecting quality and safety of food supplies.

      Purpose
      The Committee provides advice to the Commissioner of Food and Drugs and other appropriate officials, on emerging food safety, food science, nutrition, and other food-related health issues that the FDA considers of primary importance for its food and cosmetics programs. The Committee may be charged with reviewing and evaluating available data and making recommendations on matters such as those relating to: (1) broad scientific and technical food or cosmetic related issues; (2) the safety of new foods and food ingredients; (3) labeling of foods and cosmetics; (4) nutrient needs and nutritional adequacy; and (5) safe exposure limits for food contaminants. The Committee may also be asked to provide advice and make recommendations on ways of communicating to the public the potential risks associated with these issues and on approaches that might be considered for addressing the issues.

    Katharine B. (Katy) Payne , visiting fellow at the Lab of Ornithology's Bioacoustics Research Program, has been named the winner of a 2004 Earth Women of Discovery Award by the Wings Trust. The prize, which honors Payne's pioneering studies of sound communication among whales and, more recently, among forest elephants of Africa, will be conferred March 3, 2004, in New York City. The mission of Wings Trust is to celebrate the contributions of extraordinary women explorers. Others slated to receive Wings Trust awards include astrophysicist Vera Rubin, oceanographer Marie Tharp and archaeologist Iris Love. The 2003 John von Neumann Theory Prize of the Institute for Operations Research and Management Science has been awarded jointly to Michael J. Todd , the Leon C. Welch Professor of Operations Research and Engineering, and Arkadi Nemirovski of Technion-Israel Institute of Technology. The award cites their "seminal and profound contributions to continuous optimization." Todd's research focuses on optimization algorithms that is, computer methods for analyzing systems in which there are many interrelated variables and finding the best way to combine them. Applications range from controlling the flow of parts in a factory to scheduling school bus routes, political redistricting, allocating capital investments or designing electronic circuits. Todd is regarded as one of the fundamental contributors to the now well-established field of linear programming, which is a way of simplifying problems that involve so many different combinations of variables that computer solutions would take a lifetime. Today he is pioneering in new interior-point methods, which provide shortcuts for dealing with problems in many dimensions.

This includes external factors as appearance (size, shape, colour, gloss, and consistency), texture, and flavour; factors such as federal grade standards (e.g. of eggs ) and internal (chemical, physical, microbial). Food quality is enforced by the Food Safety Act 1990. Members of the public complain to trading standards professionals, who submit complaint samples and also samples used to routinely monitor the food marketplace to Public Analysts. Public Analysts carry out scientific analysis on the samples to determine whether the quality is of sufficient standard. Food quality is an important food manufacturing requirement, because food consumers are susceptible to any form of contamination that may occur during the manufacturing process. Many consumers also rely on manufacturing and processing standards, particularly to know what ingredients are present, due to dietary, nutritional requirements ( kosher halal vegetarian ), or medical conditions (e.g.
