Q. What are some utensils that are used by the French to make food? A. Spoons. Knives. Forks. Occasionally a pot holder. There are, of course, some specialty kitchen tools that have also found wide acceptance outside France. Among them:
  • A mandoline is used to precisely cut vegetables in perfect, uniform shapes, including slices, julienne cuts, or waffle cuts. It is more effective than a food processor.
  • A Chinoise is a conical strainer used for making perfectly smooth soups and sauces.
  • A lame is a small tool with a razor-sharp blade at one end, used for slashing cuts into risen bread dough just before it goes into the oven.
  • A rolling croissant cutter speeds up the process of cutting the dough to the right shape.
  • And other equipment has evolved for specialized purposes: molds for mousses, flans, terrines, and pates, plates and tongs for serving escargot, slicers for truffles, peelers for chestnuts, etc. The list is long.
Tools help, but they do not a cook make.

Ratatouille
Ratatouille is a southern French dish made from eggplant, zucchini, onions, peppers, tomatoes, and garlic. There are many different variations, and today you can find ratatouille pies, soups, and quiches. I like this version adapted from Julia Child's Mastering the Art of French Cooking (Volume 1) , Knopf, 1971, because it preserves the integrity of each type of vegetable and is moist without being soupy. It has the additional advantage of using a small amount of oil because of the initial roasting of the eggplant and zucchini.
Ingredients
  • 1/2 pound zucchini, scrubbed, and sliced into 1/8-inch slices
  • 1/2 pound eggplant, scrubbed, and sliced into thin (3/8-inch) slices, about 4-inches by 1-inch
  • 3 T. olive oil
  • 1/2 pound thinly sliced yellow onions
  • 1 sliced green bell pepper
  • 2 cloves mashed garlic
  • 1 pound ripe tomatoes, peeled, seeded, and juiced
  • 3 T. parsley
  • salt and pepper

French Recipes - Great Cuisine From France One of the most wonderful things about France is its celebrated cuisine, fine wines and numerous cheeses. Without a doubt it is hard to imagine any conversation about France that does not include some reference to its culture of food, produce and almost unique knowledge (savoir-faire) of how to prepare it. There are literally thousands of French recipes, thousands of different French wines and more than five hundred French cheeses with names. The great thing about French cuisine is how the French have managed to nurture so many original dishes from a local and regional basis; whether it be the traditional Beef Bourguignon from Burgundy, Cassoulet from the area of Toulouse, Steak Bearnaise from the Bearn, or Quiche Lorraine... Of course even small towns like Agen in the Lot-et-Garonne are famous for their prunes. Rightly so the French can be proud of their cuisine having given immense pleasure to millions. With so many French recipes and so many wines to choose from, we can only attempt to introduce our visitors to our favored selection.
