These French cooking terms might come in handy. The French love to talk about food and they have many wonderful words to do just that. Maybe you would like to join in the discussion or maybe you need help reading a French recipe or a French menu. Here is a short dictionary of some French cooking terms to get you started.
Affiné - Refers to a product that has been aged in order to more fully develop its taste. Can refer to cheese, wine, foie gras and more. Baveuse - Refers to an omelet whose center is still slightly liquid. (Literally something that is drooling, but that 's not too appetizing, is it?) Blanc de Cuisson - A liquid made from water, flour and lemon juice used to keep foods from oxydizing and losing their color while cooking. Blanchir - Placing something in boiling water for just a few minutes before removing it and placing it in cold water. This procedure allows vegetables to keep their colors and helps make tomatoes and fruits easy to peel. Braiser -Cook something slowly, with just a little liquid and a lid on it.

You don't have to enroll in a cooking school (although that can be furn too) to learn a lot about the subject - a little reading and a little practice go a long way. Larousse de la cuisine The complexity and artistry of French cuisine is without bounds. Learning a little about how French food is created will increase your enjoyment in the simple pleasure of a good meal. You may also become a better cook! When I first moved to France, I needed to learn so many new terms and names of food. Not only to be able to cook in my own kitchen, but also just so I could more fully enjoy the incredible gastronomic experience I was immersed in. One book has been on my bookshelf from the start and I enthusiastically recommend it to anyone interested in French cuisine. Larousse de la cuisine is a reference book for a life time of enjoyment.

    COOKBOOK INSPIRATION Plats du Jour is a British cookbook that was originally published in 1957. Thankfully, it has been republished by Persephone Books in England because it is an absolute treasure for anyone who enjoys wine and / or cooking. It's really more than a cookbook. It's a European primer on cheeses, wines, mushrooms, cuts of meat, fish and poultry. Full of recipes, essays and illustrations by a now renowned British artist.
    Here's an except from the cookbook Plats du Jour from the chapter entitled: "Applying the Heat" "The object of cooking is, to put it in its lowest terms, to bring about a transformation in food which would offend were it presented in its natural state. The alteration of taste and texture, the transformation of what is by nature tough into something tender, the development of a crude taste into a delicate flavor, are the result of chemical changes brought about by the application of heat, in the form of grilling roasting before the fire, baking in the oven, immersion in boiling water or hot fat, and similar processes. Most culinary disasters are the result of a failure to apply the proper intensity of heat, for the proper length of time - misjudgements arising from a lack of experience which only practice and an understanding of the chemical changes brought in cooking can rectify."

    Jazz journalist Mike Hennessey was responsible for putting together the Paris Reunion Band, a group of jazz all-stars who spent at least part of their careers based in Paris. Their debut album, French Cooking, was a studio date recorded in the summer of 1985, around the time of their first European tour. The band includes saxophonists Johnny Griffin and Nathan Davis , trumpeters Woody Shaw and Dizzy Reece , trombonist Slide Hampton , pianist Kenny Drew , bassist Jimmy Woode , and drummer Billy Brooks. Most of the musicians made names for themselves while living in their U.S. homeland (except for Reece, a Jamaica native). Nathan Davis is probably the least familiar name in the front line, because he spent a long period in Paris (1962-1969) following his discharge from the U.S. Army, and eventually returned to his homeland to become a jazz educator. He is a triple threat on tenor and soprano saxes as well as flute. Each member of the brass and reed sections contributed a cooking original to the date, while the solos and ensemble work are consistently inspired. Though the personnel changed somewhat after this initial recording, the Paris Reunion Band would continue to work off and on until 1989. ~ Ken Dryden, All Music Guide
