This process was used not only to enhance the tastes, but also provided medicinal benefits. Greek food is still a unique mix of fresh, seasonal ingredients and a generous blend of herbs and spices such as thyme, rosemary and oregano, which grow all over Greece. Greece is surrounded by the Mediterranean Sea and has one of the largest coastal areas of any country in Europe, and for this reason fish is an integral part of Greek cuisine. Fresh seasonal vegetables are also a significant element in traditional Greek cooking. And Greek food would not be Greek without the olive oil, as olives are grown and olive oil produced in many parts of Greece. Your base for this very special cooking holiday experience is the Odyssey Centre, situated just 50 meters from the beach in the small Mediterranean coastal town of Askeli on Poros Island. Poros Island is located in the Saronic Gulf region of Greece. The accommodation is in large private maisonette-style residences; each residence has air conditioning, a private terrace, two ensuite bathrooms, and is located next to the Odyssey cooking school facilities where your cooking courses will take pace. The Odyssey center offers numerous other activities such as sailing, sea kayaking or cycling.

Probably one of the more unusual recordings in Phil Woods ' considerable discography, Greek Cooking features the alto saxophonist leading a tentet with a distinctly Greek flavor, including four Greek musicians. None of them have become household names in jazz, though oud player George Mgrdichian later sat in with the Dave Brubeck Quartet during a few concerts. While the addition of instruments like the dumbeg and buzukie add a new twist, the annoying fender bass and the material chosen make the LP sound rather dated. "A Taste of Honey" is given a modal-like arrangement and it's hard not to break into a broad grin when hearing the lively "Zorba the Greek." A musical curiosity that's been out-of-print for a long time, it should appeal to Woods ' fans because of his ability to make the best of the material with his powerful, never dull playing. ~ Ken Dryden, All Music Guide

Greek Cooking Out of necessity one has to cook almost everyday, so much the better if one enjoys it and knows a large variety of dishes to prepare. I vary my menu with classic American, Chinese, Italian and Greek dishes. Logically enough, after living in Greece for 19 years, the food that reaches the table is more often than not standard Greek fare. In these pages which are devoted mostly to Greek cooking, I will share with you many of my favorite recipes.
