Ater some time of dissusion and persuasion(and trust me it took quite a while for that!) many of the wonderful Thassos recipes are revealed to you. We'll start this "cooking session" with some traditional greek meals and then(coming soon) i'll show you how to cook some of the most loved traditional greek sweets in Thassos. Traditional Meat Stew
Ingredients:
*1/2 kilo veal
*1 kilo oninons
*4 potatoes
*1 big quince
*1 big apple
*7-8 grains pepper
*2 dafni(bay)leaves
*1 1/2 cup olive oil *1 1/2 glass red wine *1 half full teaspoon sugar *salt and pepper You will need a pressure cooker. Now time to turn the ingredients into a greek cooking wonder. Place half of the olive oil into low fire to burn and put the meat in a pan and turn it to all sides using a wooden spoon. It's important not to use a fork so that the gravy remains in the meat. Then add the pepper and the sugar. After the meat has taken a nice colour add the dafni leaves and as salt needed and then "turn it off" by adding the wine. Next add the onions, the quince, the apple and the potatoes cut in four. close the pressure cooker and let them get ready in an average temperature for about an hour.

Greek Chicken Sandwiches
1 cup non-fat Plain Yogurt
3/4 cup peeled, seeded and finely chopped English Cucumber
1 tbsp chopped fresh Dill
1 clove Garlic, minced 4 boneless Chicken Breasts, cut into strips
1-1/2 T. Lemon Juice
1 tsp. dried Oregano
1 clove Garlic, minced
4 (7-inch) "Greek-style" Pitas 4 Lettuce leaves 1 c. chopped Tomato 1 medium Red Onion, cut into rings In a small bowl stir together, yogurt, cucumber, dill and garlic. Cover and refrigerate for at least 1 hour. Combine lemon juice, oregano and garlic in a med. bowl. Add chicken and toss to coat. Let stand 5 mins. Spray a wok or skillet with non-stick spray. Add chicken and cook stirring often, until no longer pink. Continue to cook until chicken is lightly browned. Meanwhile wrap pitas in foil and bake at 350° for 8 minutes. Serves 4. To assemble, place lettuce leaf and 1/4 of the chicken on 1 pita bread. Top with tomatoes, onion rings and 2 tbsp tzatziki. Fold pita over filling and serve immediately.
Dolmathes (Stuffed Grape Leaves)
Ask Americans to name dishes representative of Greek cooking and they'll almost certainly include stuffed grape leaves in the first four choices (the other three being moussaka, souvlakia, and baklava). It's such a tasty, memorable way to eat rice and ground beef. Fig and mulberry leaves were originally used for making these little rolls, a procedure that didn't change until Hellenistic times when grape leaves began to take precedence. Serve them hot for dinner or cold for appetizers. (Makes approximately 60)

    GREEK COOKING TERMS
    In Greek cooking, there are many meals that just have that "Greek" taste to them. Although they use similar ingredients that people use in other countries, vegetables, fish and meat, it is the way the Greeks cook these foods, the methods they use that define them as Greek Cuisine. Of course, a good use of olive oil, during cooking and/or drizzled over the food will make you think of Greece, as well as plenty of garlic, lemons and oregano used abundantly and you will have the aroma of Greece wafting from your kitchen. The secret with Greek dishes are they are kept simple, and they rely on a few good quality, fresh ingredients. They are not smothered with too many herbs and spices, gravies or sauces which change the taste of the meal.
    Always the flavour of the main ingredients should come through and be the dominant taste of the meal.
    If you are having fish - it will and should taste of fish! Olive oil is the first ingredient we think of with Greek cooking, especially if you have been to Greece and had a plate swimming in the oil!
