Herb gardening is useful in so many ways. Herbs are wonderful for adding fragrance in a flower bed. They also offer companionship in a vegetable garden and provide numerous uses in the kitchen. If you enjoy cooking you will certainly enjoy the flavor of fresh herbs grown in your own garden. It's important when choosing your plants for herb gardening to know their growth habits. Mint for instance is a perennial that will spread from year to year. It will take over if you allow it to. Plants can be grown in the ground or in a container. Both ways work well. Some common spices that are used in cooking include basil, sage, chive, rosemary, mint, dill, and parsley. Consider placing these close to your home either in containers or in an area where the soil can be amended. You can also place them in your vegetable garden. When planted next to certain vegetables they will help to prevent intruding insects , such as planting basil next to tomatoes. This is known as

Insects Products Garden Products Seeds Herb Gardening MANY of the plants we grow in our gardens such as annuals, perennials, shrubs and trees are herbs in the true sense of the word. With increased interest in recent years in continental or gourmet cooking the word "herb" is nearly always thought of by home gardeners to mean the "culinary" herb. When we started to garden we used such herbs as creeping thyme as a low plant to grow between the flagstones of our terrace for its attractive tiny foliage and aromatic odor, and we grew the familiar parsley and mint. However, culinary herbs such as dill, basil and chives were not included in our garden plans. The herbs I have grown are listed below with instructions for growing them. Perhaps inexperienced gardeners as well as those who have not yet had the pleasure of growing these interesting plants will give some thought to starting a small herb garden. Even a small plot 4 by 6 feet will grow all a small family would need. If not grown for use in cooking, herbs are worth growing for pleasant aromatic foliage and some of them for the beauty of the flowers as well. Herbs can be used fresh for garnish in salads and to perk up the flavors of bland vegetables or to add flavor to meats and stews in which case one needs only to nip off a few leaves when wanted.

Department of Horticultural Science If treated properly, many herb plants will survive in the garden for a number of years. Others are sensitive to frost or severe cold weather and must be brought indoors, protected, or replanted each year. Annual herbs will be killed with the first hard frost in the fall. Remove dead plants in order to minimize overwintering insects and disease problems. Some frost sensitive herbs, such as basil and geranium, can be brought indoors for the winter. Take cuttings to root or pot the entire plant. Many perennial herbs are winter hardy in all or parts of North Carolina and can be left in the garden. A few plants are marginally winter hardy; in a mild winter they survive but may die during a severe winter. They can be brought indoors to overwinter. Unless they receive adequate light indoors they may drop some of their leaves. Lemon verbena is a deciduous plant; it will lose all of its leaves indoors. After a severe winter, some outdoor plants such as rue, sage, thyme, and southernwood, may appear brown and dead. The leaves may simply be dehydrated or the plant may be dead almost to the ground. Scrape the bark of a few stems to determine the extent of damage. If the stem is green, delay pruning until after new growth begins. Additional information on winter hardiness of specific herbs can be found in Table 1.
