A beautiful and pristine dining room in a Hungarian country house. For over two months now I have been toying with the idea of creating a web site about Hungarian cooking. I was remembering some of the simple dishes that I used to cook for my three growing children. However, to present the recipes now is not an easy task because I never followed written recipes; I had to create them from my memories! Of course, I had to remember the taste in order to add the right kinds and amounts of spices and ingredients. But this was never a problem, I think that if you are Hungarian then it is in your blood and my poor children never knew the difference. Little Judy and Louis enjoying their Hungarian dinners, while Baby George (inset) still needs to grow a bit to participate. When I was a young bride and we had just arrived in the States I made many blunders when preparing the evening meal, but, I had a good excuse I did not speak English and was unfamiliar with the local measurements. Eventually I got over my shortcomings and even invented new Hungarian dishes. All Hungarian dishes are made from scratch. You just cannot go wrong if you buy the freshest ingredients and master the techniques needed to produce a satisfying dish. Here I will have some of my recipes and hopefully some pictures. I will have to trust my photographic abilities or borrow some if I can find appropriate ones. I need to mention also that some of my recipes will be from later in my life. I do not intend to group the recipes since I think that it will be more interesting for the reader to browse through and find something of interest. This is intended to be a "fun" site for both of us.

PAPRIKA PAPRIKA PAPRIKA!
"PAPRIKA" is really the biggest thing you need to know about Hungarian cuisine!
If you go into Budapest's huge market, you will see stalls selling huge rings of sausage, and ground paprika ....... (incidentally, they also sell huge bags of dried mushrooms (Cepes, Penny Buns and Chanterelles, amongst others), for 3-4 a bag - the bargain of my holiday!
However, one look at any traditional restaurant menu will also tell you that demand is also huge.... Paprika sausage, Gulyas soup, chicken in Lesco, even the salads have peppers in them, and the list is endless - the country is Paprika mad!
And what do these meals taste like? Well, you often get a meat based stew, with an exceptionally rich, tasty, sweetish, peppery sauce (this isn't particularly hot), with either fried potato wedges, potatoes with diced parsley, dumplings, or a kind of pasta, with which to mop up the excess sauce. Vegetables can be a little rare in Hungary!

The recipes were never written down, but have been handed down for many generations in my family, by example. I want to preserve these recipes for my children, grandchildren and great grandchildren, and all the generations of other families who thought these recipes were lost to them. There has been an unbelievable response to the recipes and cookbook since it's initial printing in 1995, thousands of books have been sold in North America, South America, Australia, Europe, and the United Kingdom. The recipes have been collected by people over the Internet in virtually every corner of the world. I was looking for information on easy cooking recipes and this homepage was in the search results and it just turned out so nice. This website is presenting a lot of text about easy cooking recipes but other relevant text is also available on the site. If you need more text on easy cooking recipes this site is as good as they get, providing a lot of information and presenting it nicely. The style of the site is fine for the type of text they are presenting, but it did not really impress me.
