Jewish Cooking
Level:  Basic Jewish cooking is a unique synthesis of cooking styles from the many places that Jews have lived throughout the centuries.  Jewish cooking shows the influence of Middle Eastern, Mediterranean, Spanish, German, and Eastern European styles of cooking, all influenced by the unique dietary constraints of kashrut and other Jewish laws. Many of the foods that we think of as Jewish are not unique to Jewish culture.  Stuffed cabbage, a traditional Jewish dish, is common in Eastern Europe.  Blintzes and knishes are familiar to all Germans, not just Jewish ones.  Falafel and hummus, increasingly thought of as Israeli-Jewish foods, can be found in any Greek restaurant.  But the combination of these varied foods into one style of cooking, along with our own innovations, is uniquely Jewish. On this page, we identify and describe several of the better-known, popular Jewish dishes.  Most of these dishes are Ashkenazic , because that is what we know best.  Sephardic Jews have their own distinct cooking traditions.  We will provide recipes for those foods that we know how to cook, and will provide links to other recipes scattered throughout this web site.

Quick Walnut Penuche
Penuche, Quick Walnut (D/P, KLP, TNT)
Source: "Better Homes and Gardens Junior Cook Book" (1974)
Yield: 1 8" square pan
Butter
1-3/4 to 2 cups powdered sugar
1/2 cup butter
1 cup brown sugar, packed
1/4 cup milk
1 cup walnuts, chopped
Take out:
waxed paper 8"x8"x2" pan flour sifter measuring cups 1-1/2 quart saucepan wooden spoon potholder rubber spatula Butter square pan lightly, using waxed paper. Sift and measure powdered sugar. Melt 1/2 cup butter in pan. Stir in brown sugar. Cook and stir over low heat for 2 minutes. Stir in the milk. Cook until the mixture is boiling. Cool to room temperature. gnocchi: a love story
I've been promising this recipe for some time, and you've all been so patient. It just wasn't 100% until today. Just about an hour ago, in fact. I finally got these exactly how I wanted them. The taste had always been there, but getting those darn grooves had proved challenging. Since I don't like one-trick pony kitchen gadgets, buying a wooden gnocchi board wasn't on my list of things to do. Alas, I had resigned myself to the imperfect look but still wanted to get a good beauty shot of these babies. So back to the test kitchen I went. That's when my Eureka moment happened. I had shaped, rolled and cut the gnocchi. I was going to leave them as-is because that fork groove just wasn't yielding the look I wanted. Then, on a whim, I whipped out my pastry blender, placed a gnocchi in the center of my palm and very gently rolled the grooves over it. Voila! Aren't they lovely? See, in truth those grooves are what make gnocchi so endearing. They give them character and collect little bits of sauce. There's also a lot of symbolism and meaning in these gnocchi. The Mr. gave me a very special cookbook last October for our wedding anniversary. From the moment I opened
