Fat golden carp, set thrashing in bathtubs on Thursday, metamorphosed into savory gefilte fish come Friday morning. Gleaming red and gray mullet and sweet-fleshed sole were fried and marinated for elegant cold Sabbath lunches. Stewed or roasted, sauced with fresh green plums or spicy gingersnaps, the choicest fresh fish graced the festive meals. And during the workaday week, there was preserved fish: smoked, salt-crusted, or brined-herring, mostly, and anchovies. Later there was salmon in all its permutations, including canned, which in America was quickly adopted for the ubiquitous dairy meal, salmon croquettes.

    Rosh Hashanah is the Jewish New Year. When literally translated from the Hebrew Rosh Hashanah means head of the year. This holiday is customarily celebrated by eating sweet foods. Such foods are eaten as a symbol of one’s desire for a sweet and pleasant new year. After the end of prayer services Jews come home and celebrate the holiday is with a special meal. The theme of the meal is one’s wish for good fortune and happiness in the coming New Year. Jews from around the world attempt to incorporate sweetness into every dish served. Whatever you do with it, do not feed this ingredient to babies under a year old because it can carry health risks for small children.

    3 tablespoons smaltz
    Juice and grated rind of one lemon
    3 cups matzo meal
    1/4 cup boiling water
    3 egg yolks
    3/4 cup sugar 1/4 teaspoon salt 3 egg whites Strawberry filling* Mix the following together: 1 ½ cup strawberry preserves ½ cup finely chopped walnuts Enough matzo meal (about 3 tablespoons) to make a thick mixture. Let stand 10 minutes. Directions
    • Mix smaltz with lemon juice and rind in bowl. Stir in matzo meal and boiling water. Blend well until mixture is smooth.
    • Beat egg yolks until thick and lemon colored. Stir in sugar and salt. Add yolk mixture to matzo mix. Cool.

    Hamantashen (Haman's ears) are traditionally eaten on Purim. Lisa Katz zSB(3,3) According to one Jewish joke, the theme of all Jewish holidays is: "They tried to kill us. We survived. Now let's eat!"
    Hamantashen Recipes
    Hamantashen is a triangular-shaped, filled pastry which is traditionally served on Purim. While today the pastry is filled with a variety of sweet options, it is most traditional to fill the pastry with poppy seed filling. The source of the pastry was poppy seed treats called "Mantashen".
    The name was intentionally distorted to "Hamantashan" which means "Haman's pockets" in Yiddish. Some say that Haman wore a three-cornered hat, and that is why the pocket of dough is triangular.
    In Hebrew, the pastry is called "Oznei Haman" which means Haman's ears. This name may have come from the midrash which says that when Haman entered the King's treasury, he was bent over with shame and humiliation (literally with clipped ears).
