*Ingredients (4 portions)
Rice Cake: 1.3 Lb (600gm)
Low Sodium chicken stock: 4 cups (32oz)
Fish cake[Eo-mook]: 4 sheets (about 3.5 by 5.5 inch)
Green Cabbage: 1/4 head
Green Onion: 4 Red pepper paste[Gochu-jang] : 2 Tbsp
Red pepper powder[Gochu-garu]: 1 Tbsp
Soybean paste(doen-jang): 1 Tbsp
Garlic: 2 Cloves Corn Syrup: 3 Tbsp Sugar: 1 Tbsp Sesame Oil: 1 tsp Roasted sesame seeds: 1 tsp  want to show you what kind of rice cake and fish cake you should get. For rice cakes, chose the ones about 2inchs in length and thickness of a finger. For fish cake, you can find flat ones as shown in photos. Submerge the rice cakes in water for about an hour and drain. You can also blanch them in a pot of boiling water very briefly for about 10 seconds and drain Cut the fish cakes in squares of 1.5 inch length. Cut cabbage into a similar size as the fish cakes. Cut Green Onions in 2 inch length.

      Your favorite Korean cookbook, please!
      Folks in the Boston area probably know that an H-Mart just opened in Burlington, MA. It is a large, well-stocked Korean-centric supermarket in an area whose only Korean groceries have been mom-and-pop stores. For those of us who did not grow up in a household with a Korean cook, this is an opportunity to shop, cook, and learn some new food ways. A few good cookbooks would be a real help. Unfortunately, there are comparatively few Korean cookbooks available, and they tend not to be on the shelves of everyday brick-and-mortar stores. Buying an unknown cookbook online is always a bit of a gamble. Plus, strange as it may seem, the H-Mart has no cookbooks for sale. So, fellow Hounds, what are your nominations for a few good Korean cookbooks? In particular, I am looking for cookbooks that are

Ingredients
  • 2/3 lb. oysters
  • 1/2 cup flour
  • 2 eggs
  • 10 gingko nuts
  • ginger juice
  • salt
  • black pepper
  • parsley
  • MSG (optional)
Directions
1. Buy fresh, large oysters. Wash them in salt water, remove the shells and drain. 2. Sprinkle the clean oysters with the black pepper and ginger juice. 3.Dip the oysters into flour and then into the beaten egg. Fry them in a hot oiled pan. 4. Stir-fry the shelled gingko nuts with salt and peel off the skin. 5. Arrange the fried oysters in a dish and garnish with the ginko nuts and parsley.

Inspectors(Diverting Medical Aids) [Memories of the North] A tale by a former pharmacist from Ha-myun mines, Sae-byul county, N. Hamgyong province Although I was born and brought up in Pyongyang, I had lived for years in Sae-byul county(formerly Kyong-won), N. Hamgyong province, the northernmost corner of the Korean Peninsula, before I escape N. Korea. Nowadays, cheap goods from more open and reformed China are flooding the area, which boosted the living condition there. However, up until mid-90's, this was the place of exile where people with bad (ideological) background were banished. My mother joined the Volunteers for N. Korean Army during the Korean War, and later became a medical doctor. I followed her wish, graduating Ham-heung Pharmaceutical College and becoming a pharmacist. Branded as "Southerners"(translator's note: from a family of S. Korean origin), we were kicked out to faraway Sae-byul country from Pyongyang, suffering from severe discrimination. I was a pharmacist at the hospital of Ha-myun mines, Sae-byul county. There were many S. Korean POW's(from the Korean War) at Ha-myun mines. Chang Moon-han, a S. Korean POW who escaped in 1998, and Baek Jong-kyu, who returned as ashes in the hands of his daughter a few days ago, are all from Ha-myun mines. Since it is the place of banished people, it was well outside the proper care and consideration of the authorities. The living condition there was atrocious compared with other areas.
