T-Stick: Individual Use Meat Thermometers 1-877-T-Stick-8 What is a T-Stick? Buy Now Get a Free Sample Food Safety Tips ... Home Page With all the publicity surrounding contaminated meat recalls and illnesses from the deadly strains of E.coli bacteria, there is something you can do to make sure that the meat you prepare is safe for your customers and your family. Using T-Sticks will help prevent infection from food-borne bacteria, such as E. coli O157:H7. T-Sticks are much easier to use than meat thermometers. The sensing part of a meat thermometer must be entirely inserted to be accurate, which is difficult to do with a 3/8-inch thick hamburger, but quite simple with a T-Stick! T-Sticks eliminate cross-contamination, do not need to be re-calibrated like regular thermometers and won't break if you drop them. T-Sticks are so simple to use.
  • They don't need calibrating. They won't break if you drop them. They don't need batteries. They just work reliably and accurately every time.
Ensure that your family enjoys perfectly cooked and perfectly safe meats at every meal with T-Sticks. Don't take our word for it

    C o o k ... a - Cooking Meats M eats are the basis for many meals as we all know. Your basic meats are beef, pork and chicken. Then from there Louisiana folks have the wild game such as venison, duck, goose, frog legs, turtle, alligator, raccoon and squirrel. If you're not from here I'm sure a few of these wouldn't be on your list of main courses, but us South La. Cooks most certainly will. Frog legs, turtle and alligator are in the seafood section. Bar-B-Qs, pot roasting, smothering, casseroles, sauce piqaunts, sausages and dressings are some of the favorite cooking methods. Below is a short discussion on cooking, handling and seasoning of meats. For the most part this is a short meat safety course! Cooking meats properly is of great importance. Uncooked and undercooked meats can cause many health problems so follow the guidelines. The most important guideline to stamp on your forehead is; Cook all meats to the proper internal temperature. For Beef and Pork, an internal (center of the thickest part) temperature of no less than

Cook for about 10 minutes or to your liking. Enjoy

    Cooking Time
    • Because it is lower in fat, grass-fed beef requires 30 percent less cooking time than conventional grain-fed beef. This is particularly important when pan-frying or grilling steaks. Grass-fed steaks are best eaten medium-rare to medium. As with any meat, a well-done steak will probably be tough. For a medium-rare to medium steak, cook for six minutes per side.
    Cooking Method
    • Bring steaks to room temperature before grilling or pan-frying. Our favorite cooking method for steaks is to rub them with a little olive oil, then sprinkle with sea salt and pepper and grill over a very hot charcoal or gas grill.
    Thaw Completely Before Cooking
    Let Rest after Cooking
    • All meats should be allowed to rest for 8 to 10 minutes after cooking. This allows the juices to settle.

    Meats Cooking Tips
    We served meat every day in our family menu because meat provide an excellent source of protein for our family. You are able to find your meat more tender, tasty and juicy if cooked according to the cooking tips. If you cooked accordingly to the cooking tips. You will find that meat does not shrink excessively, as with high heat, and that you may be able to get more serving from your regular size roast or meat cut. Meat Preparation Directions Roast Cook meat slowly without grease or water with stove-top roasting;
  • Place meat in empty cold utensil and brown with medium heat. Meat may stick during browning process; however, it will loosen as process continue. Allow meat to sear until it is nicely browned and loosen easily. Then turn. Sear well on both side. Season meat and then cover. As soon as vapor appears, lower heat until vapor stops escaping. Keep the heat sufficiently high so that an occasional bubble underneath the cover will escape.

    “Wow! That's all I can say. Thanks for such a great site and information. I have already ordered your DVD after discovering your site this morning. As an avid ‘foodie’ I have always hated the recipe mentality but have had difficulty breaking out of it, especially with family always asking: ‘What does Betty Crocker Say?’ I have even attended Boot Camps at the Culinary Institute which helped - but wasn't quite enough. Thanks again from a new Fan (burning the recipes)”

    Because of the intense heat and evaporation properties of the grill, marinating meats before grilling helps by adding moisture to the product. Marinades can be made of simple herbs, or a complicated cooked recipe. Mild marinades should be used for more delicate meats, such as veal. Stronger marinades should be used on game and beef.
    White wines are usually used for white meat, while red wines are usually used for red meat marinades. Not only does wine add distinctive flavor, the acids break down connective tissue and help tenderize meat.
