Welcome to Mexican Recipes!
You can find Mexican recipes , all over the internet, but many are not authentic South of the Border cuisine. Many recipes are Americanized versions modified beyond recognition. And, we include some here since many are very popular. But our focus is primarily to provide authentic Mexican recipes. Mexican Cooking is a very unique cooking style. It utilize a lot of fried food, mesa, chile peppers, tomatoes and tomatillos. Popular seasonings include cilantro, cumin, lime and dried chile powder. In general, Mexican food is simple and not difficult to cook but it does employ a few specialized cooking techniques. Those special techniques are included in our recipes or in articles on this site. Mexican Cooking Techniques

Mexican cooking techniques consists mostly of methods you are familiar with; namely frying, grilling, boiling and baking. You may not be as familiar with steaming, which is used for many Mexican dishes. Frying is perhaps the most predominate cooking method which evolved from the early days because ovens were not available. Meats used in Tacos, Burritos, Enchiladas and many other dishes are generally fried. Tortillas, which are widely used in Mexican recipes, are fried or cooked on a lightly greased skillet.

A native of the United Kingdom , she moved to Mexico in 1957 with her husband, Paul Kennedy, who was a correspondent for the New York Times Mexican cuisine . Her first cookbook was published in 1972. She currently resides in the state of Michoacán Diane also makes appearances and reads from her published works. Ms. Kennedy was awarded the Order Of The Aztec Eagle , by the Government of the Republic of Mexico for her contributions to the documentation of regional Mexican cuisine . The Aztec Eagle is the Mexican equivalent of a knighthood for non-Mexicans.

Do people in Mexico eat the same dishes I find at my favorite Mexican restaurants here in the United States? Yes and no. Most Mexican restaurants in the United States specialize in only one aspect of Mexican cooking, antojitos mexicanos, literally "Mexican-style whims." These are the corn and tortilla-based specialties that include dishes such as enchiladas, tacos, tamales, quesadillas, chalupas, and tostadas that evolved directly from the original Indian cooking.
