From Publishers Weekly Bsisu, an Ohio chef by way of Jordan, Lebanon, Kuwait and England, sets out to define the cuisine of the Arab world. As she points out, a quarter of the globe is covered in her treatise, and she lovingly explores and clearly explains dishes from Morocco, Tunisia, Iraq, Syria, Egypt, Jordan, Lebanon, Palestine, Yemen and the Arabian Gulf. What's most apparent is that Arab meals are elemental in nature, more often reliant upon foodstuffs than technique. There are perhaps a dozen key ingredients on which most of these 160 recipes are based. Bulgur (cracked wheat) gives rice a run for its money as the grain of choice and is integral in making Kibeh, an all-purpose dish that also employs beef or lamb, and a mix of spices, and can be made into skewers, balls or cooked in a baking dish. The two rivers were the Tigris and the Euphrates and in the southern part of Mesopotamia where the rivers met lived the first civilization, that of the Sumerians. In northern Mesopotamia is Assyria, an area with mountain ranges and fertile fields. Here, in the valleys of Nineveh and Arbel, are the fields that sustained the first organized civilization. Let us sail the Mediterranean, the Red Sea, the Sea of Marmara, travel the lands of cous-cous and tagines, of fig trees, date palms, and olives, of vibrant herbs and spices that so mark the food of this region.

    The Origins of Middle Eastern Cooking
    by Diana Serbe with Elinoar Moore The region of the Middle East was the site of great ancient civilizations, Mesopotamia and Egypt, as well as the birthplace of Judaism, Christianity, and Islam. Today the term Middle East is also used in a cultural sense for that part of the world predominantly Islamic in culture, in which case Afghanistan, Pakistan, and the remaining countries of North Africa are included. The cooking that developed from country to country bears similarities as well as differences, but most of the cooking had its origins in what we may call 'tent cooking.' Geographic borders have been defined and redefined through the centuries, but many of the roots of Middle Eastern cooking can be found in the area that became the country of Israel . Today's Israel is located in the South West corner of the Asian continent and at the South Eastern shore of the Mediterranean Sea. Geographically it is at the crossroads of Europe, Asia and Africa. Bordered by Lebanon to the North, Syria to the North East, Jordan to the East and Egypt to the South West, Israel's cooking is most heavily influenced by its Arab foundations, though its Western shoreline is on the Mediterranean Sea. The history of the area is a mix of Jewish and non-Jewish - Muslim and Christian Arabs, Bedouin, and Druze, a true melting pot.

In that world of strong family ties, large clans and women at home, hospitality gregariousness are deeply entrenched; offering food is the central act in the highly developed art of pleasing. The cooking is different in every town, every village and indeed in every family: There are rural foods and urban ones, foods which belong to the desert, others which belong to the mountain, the plain or the seacoast, nomadic foods and street foods. Middle Eastern cooking outside the Middle East shows its own variations, too. But there are nonetheless many general characteristics which all these foods, and all the countries, share. It is a very sensual kind of cooking, using herbs, spices and aromatics generously. Certain methods, like skewer cooking over charcoal or long, slow simmering in unglazed covered pots, are typical of the whole region. All the countries have rice and wheat dishes, stuffed vegetables, pies wrapped in paper-thin pastry, meatballs, thick omelettes, cold vegetables cooked in oil, scented rice puddings, nut-filled pastries, fritters soaked in syrup and many other common elements. You find raisins with pine nuts everywhere, garnishes of chopped pistachios and almonds, and the same food combinations, such as chickpeas with spinach. It is a shared history, including that of two great world empires, which has brought unity to the kitchens of the Middle East. The spread of Islam and the establishment of an enormous Islamic state stretching across Asia, North Africa and the Mediterranean was the most important factor in the development of a gastronomic tradition comparable to that of France and China.

    Baba ghanoush
    1 medium eggplant
    1 teaspoon olive oil
    1/2 cup onions minced
    3 cloves garlic
    1/4 cup lemon juice
    3 tablespoons creamy peanut butter
    1 tablespoon fresh parsley minced
    1/2 teaspoon black pepper
    Preheat oven to 400. Pierce eggplant in several places with a fork. Place on cookie sheet lined with tin foil. Bake for 1 hour. Eggplant will be soft and flat. Allow to cool then scoop out flesh into a blender. Discard skin. In skillet, heat oil and sauté onions and garlic. Cook and stir 3 minutes or until onions are transparent. Add to blender and add lemon juice and peanut butter. Blend until smooth. Stir in parsley and pepper. Serve with toasted pita wedges, cooked chicken or cut vegetables.
