Roman Catholicism is officially the country's religion, but the influence of the church is less pronounced than in many other Latin American countries. Other religious groups include fundamentalist Mennonites and the controversial New Tribes Mission, an evangelical group which operated with the collusion of Stroessner's dictatorship. Meat dishes as well as tropical and subtropical foodstuffs play an important role in the Paraguayan diet. Grains, particularly maize, and manioc (cassava) are incorporated into almost all meals. Try tucking into locro , a maize stew, mazamorra , corn mush, , a hot maize pudding with meat chunks, and sooyo sopy , a thick soup made of ground meat and served with rice or noodles. Desserts include , a delicious mix of corn, milk and molasses. Tea or mate is consumed in vast quantities while mosto (sugar-cane juice) and (cane alcohol) are also frequently imbibed.

          Edit Add a photo Several aspects of Paraguayan tradition can find its origin from the Guarani civilization. Bordering Brazil and Argentina, Paraguay (translated “From a great river”) traditions involve a fusion of Guaranian and Spanish which is present in religion, arts, and cuisine. These traditions are influenced by lifestyles, history, society and scenery.
          Background: Guarani were indigenous people living in South America. Today the Guarani language is spoken by millions of people in Paraguay and neighboring countries. The Guarani were nomadic people who depended on fishing, hunting and gathering. Their staple crops were corn and yucca which is a staple in the country today. This agricultural focus is present in Paraguay today with heavy exportation of soy, sugarcane, yucca and tea. To this day, the population holds agriculture as its primary employment.
          Religion: Predominantly Catholic, although heavily influenced by Guarani folklore that meshes with Christianity to form a diverse set of traditional worship.

Paraguayan culture therefore is a fusion of two things cultures and traditions: one European, the other Southern Guaraní. More than 93% of Paraguayans are mestizos , and this makes Paraguay one of the most homogeneous countries in Latin America. A characteristic of this cultural fusion is the extensive bilingualism present to this day: more than 80% of Paraguayans speak both Spanish and the indigenous language, Guaraní Jopara , the mixture of Guaraní and Spanish, is also widely spoken. Landscape in the Gran Chaco , Paraguay Main Catholic Chapel in Concepción, Paraguay This cultural fusion is expressed in arts such as embroidery ( ao po'í ) and lace making ñandutí ). Paraguay's pre-eminent literary figure is the poet-novelist Augusto Roa Bastos. Paraguayan music is something of a curiosity - despite the fact that the majority of the population still speaks the native tongue, the music is European in origin, with little or no traces of Black, Brazilian or Argentinian influences. The guitar and harp are popular instruments and songs are usually slow and lachrymose. Dances, such as the polka and bottle dance (so-called because performers swing around with a jar on their head) are, however, much livelier. Agustín Barrios (1885-1944), one of Latin America's most revered composers for the guitar, often performed his music in full Guarana costume, promoting himself as the Paganini of the guitar from the Paraguayan jungles.     History
    After World War II, politics became particularly unstable. Alfredo Stroessner was dictator from 1954 until 1989, during which he was accused of the torture and murder of thousands of political opponents. Despite Paraguay's human rights record, the U.S. continuously supported Stroessner. Stroessner was overthrown by army leader Gen. Andres Rodriguez in 1989. Rodriguez went on to win Paraguay's first multicandidate election in decades. Paraguay's new constitution went into effect in 1992. In 1993, Juan Carlos Wasmosy, a wealthy businessman and the candidate of the governing Colorado Party, won a five-year term in free elections.
