      Teach me about authentic Persian cooking
      So, my new favourite restaurant is Persian. I've been loving the spicing and flavourings, but have only the vaguest idea as to how to recreate these dishes at home. Cookbook recommendations? Treasured family recipes you care to share? (I've found some stuff online, but have no idea how authentic any of it is.) I'm looking for recipes for (what I understand to be) traditional dishes like Kabab-e Koobideh, Maast-o-Khiar, Khoresht-e Fesenjaan, etc. Dessert recipes would also be great.

      Persian Cooking Classes?
      Does anyone know of any Persian cooking classes available in LA, I was shopping at Star Market yesterday, and it made me want to learn more about how to correctly use some of the mysterious ingredients ( lebni cheese, pomengranite syrup, various dried favas, rose petal jam, many spices and also fresh herbs, dried blue borage flowers, the wonderful fresh green figs that are pink inside at 1/3 the price of at the SM Farmers Market) etc) sold there. Or if anyone can recommend a cookbook, that would be wonderful...Thanks

  • Most equipment is probably similar to what you have in your kitchen.
  • One of the most traditional dishes is polo (rice) and chelo. Polo is rice mixed with other foods such as meat, vegetables, fruits and nuts. Chelo is plain white rice which is served with meats or khoresht (stew). You can use basmati rice for better result, aroma and flavor.
  • Rice cooked, drained, put it back in the pot to simmer with saffron at the bottom (for different kinds of rice, you may add vegetables, fruit, fowl, meat, or nuts). You need a thick bottomed pot so not to burn the rice and the crust at the bottom.
  • If you would like a delicious crust, you may want to use non sticking pot (Teflon).
