If you continue reading this page you get some background on modern and traditional Polish cooking. In modern Poland, traditional Polish cooking seems to mean using recipes that are popular. And the inventory of recipes that are considered traditional keeps growing. For example, it is now considered traditional to serve turkey on Easter. The markets in Poland make special effort to have fresh whole turkey available to satisfy the growing demand for this recently adopted tradition. During the rest of the year, the markets carry fresh turkey breasts and legs. The rest of the turkey is offered as fresh ground. Corn is an interesting addition to the Polish menu. Using corn in salads is considered traditional. It can even be found on Pizza. And while talking about Pizza, pinapple and tuna fish are tradtional offerings. Host Jan McDaniel As a second generation Polish-American growing up in 1950s Detroit, I took for granted ethnic delicacies such as powdered sugar-dredged angel wings (Chrusciki), fresh from the bakery, my mom's homemade stuffed cabbage, and fresh pierogi from the corner meat market. Living in the South, the only time I eat Polish food now is when I either visit Detroit or cook it myself. Good Polish recipes aren't so easy to find, but scouring the Web, I found several sources. SOARSearchable On-line Archive of Recipes This recently updated site, run by volunteers who love cooking (and I assume eating) was a joy to visit and listed a wealth of Polish recipes. To name a few: Easter bread (Babka), sauerkraut soup, meatballs with sour cream (Klopsk W Smietanie), noodles and cabbage, kolaches with cheese filling, honey cake (Medianyk), and baked pork chops in sour cream (Wieprzowina w Smietanie). Although any cuisine that could be labeled as 'peasant' food would be fairly simplistic by nature, the Polish people have developed a long tradition of making the most out of very little. This is due to the Poles suffering several centuries of war, deprivation, and hardship, which led to an emphasis on both presentation and flavor.
Traditional Polish Food
Both traditional, and contemporary Polish food can be far more diverse and creative than one would imagine, although copious amounts of meat, especially pork, and the ubiquitous lard-based spread known as Smalec are still the basic staples of every Polish meal. Family recipes and cooking techniques are handed down from generation to generation, and most women in Poland are trained by their mothers starting at a young age.

The national dish of Poland is bigos , a rich and dense sauerkraut and meat stew that is cooked for several days to intensify the flavor. Each family, and in fact, each person has their own unique version of bigos, but the overall theme is the same. The flavor of bigos is actually very mild, and not at all sour, but the cooking smells can be overwhelming!

Yes, I am Polish. As in all my ancestors were from Poland. Of course, at the time they came over, the country of Poland as a political entity did not exist. Nonetheless, they were polish, and their ancestors were polish...as far back as they could remember. Makes me believe that Adam and Eve must have been Polish, too....right An interesting question: why is it that, in America, at election time, everyone wants to know what us people of Polish extraction think? All you hear on the news is "the Poles are saying this" and "the Poles are saying that," and "the latest Pole is.....: I think it's quite a testament to the intelligence, fortitude, and wisdom of people of Polish heritage that Americans in general are so very concerned about what we believe, politically. "Eat, drink and loosen your belt". A POLISH CHRISTMAS I spent my first Christmas in Canada with Peter's family. The festival is celebrated on the evening of 24 December. Known as Wigilia , it is the most important culinary event of the year. The dishes are meatless. I read that at one time, the dinner consisted of twelve courses representing the twelve apostles. Just before dinner, the family will gather at the dinner table and break bread. A piece of a blessed communion host is broken, eaten and passed from one member of the family to the other. Here is a sample Christmas Eve dinner menu. Mushroom Soup or Clear Beetroot Soup

My Grandmother was a tough, traditional Old World Polish woman who was committed to the care and well-being of all her children. This commitment made her a great cook over the years. When she died back in 1984, she left a big empty space in all of our lives.
A few years later, my Mom happened upon a shoebox tucked away in the corner of my Grandmother's closet. It was filled with handwritten notes of all her greatest recipes we all loved.
My Mom translated many of these treasured recipes from Polish and did her best in converting the required quantities and ingredients. We wish to share them with you here, so that you too can enjoy the favorites we thought were lost forever. So thanks for stopping by... you all help to honor her memory by enjoying her culinary magic!
