    Making Marmalade - How to Make Marmalade
    Val Harrison Making Marmalade Marmalade making is very similar to jam making but the rind needs much longer cooking so more water is required. The fruit is simmered until the rind is soft and the volume of liquid has reduced by about half. Jelly marmalades are made in the same way but are strained through a jelly bag after the fruit has been cooked and strips of rind are then added. Any citrus fruit can be used for making marmalade. Bitter or sweet oranges, lemons, grapefruit, tangerines, satsumas and ugli fruit, on their own or in various combinations. Flavourings such as ginger, whisky, rum, brandy, treacle and apricots can be added but the citrus flavour must predominate. The same equipment is required for making marmalade that is used for jams and jellies with the addition of a good sharp knife and a juice extractor.
    Pectin
    The pectin in citrus fruit is contained in the white pith and pips. Extra acid is often added to ensure a good set as only about 1 lb (450 g) of fruit is used to make 3 lbs (1.4 kg) of marmalade.

Put alternately cherries and sugar in the pot, in several layers and water on the end. Put the pot on the low heat, till sugar melts and then continue to cook cherry preserves in moderate temperature, till it become thick (when preserves fall in thick drops from the spoon). Remove the pot from the heat, cover it and let it stand about 10 minutes (cherries to release some juice). Return the pot on the heat, cook it for 15 minutes more and remove it from heat. When it is done, remove foam, which gathered on the surface of the preserves, with the spoon. Cover the pot with a clean gauze and let it over night. Pour your fruit preserves in clean jars.

    Recipe from:  My dad, Gerry Before starting, you will need the following:
    1 jar canning pot with the rack and lid
    1 jar funnel
    1 magnetic lid wand
    enough pint jars with new, unused lids (jars and rings can be re-used)
    enough sugar per amount of figs
    enough lemon slices per amount of figs
    enough pots for figs to boil
    1 small saucepan Sugar and Jar Estimate:   (2 cups sugar = 1 lb) Fresh Figs (in quarts)         Sugar (in cups)    Number of Jars Needed

I made gallons and gallons of tomato basil soup....
Sorry, I have no recipe as such....I'm just dealing with bushels of tomatoes!
In my heavy, clad bottomed soup pot, Iput as Rachel Ray would say, "twice around the bottom of EVOO" And added half a head of celery cut up, and one very large sweet onion.
While these were slowly sauteeing I scalded and peeled tomatoes....LOTS of tomatoes! LOL! And put them into a bowl.
When the celery was beginning to soften I added garlic..4 big cloves, 5 or 6 if they are small, and when the garlic has softened about 3 minutes I added chicken broth...my own I used a 3 cup container of frozen, but I ran out after 2 batches of soup and used 2 cans of low salt broth.
