Jan 11, 2010 "Contribute content like this. Start Here Whiting are a small but tasty saltwater panfish caught in the Atlantic and Gulf and called by many regional names. In the north they are called kingfish, in the Carolinas they are called sea mullet or Virginia mullet, in the south they are called whiting.
Be aware that some grocery stores sell imported fillets in the frozen foods section labeled "whiting" but these are not sea mullet. They are different, less tasty fish.
Most whiting are cooked whole and dressed but larger ones can be filleted.
Easy Fried Whiting
6 pan-sized whiting, dressed
1 cup flour
1 egg
salt
black pepper
veggie oil Place milk in a large bowl. Crack and add egg, beat until smooth. Place flour on a plate. Salt and pepper whiting to taste. Dip whiting in milk and egg mixture then roll in flour until coated. Fry in veggie oil until fish is golden brown. Serve with slaw, hushpuppies, French fries and sweet tea. Serves 2. Romantic Morning Whiting 4 fresh whole whiting, dressed

Feb 4, 2010 "Contribute content like this. Start Here Tilapia is an important American food fish, a diverse group of nearly a hundred different species often grown in freshwater and distributed to restaurants and stores.
Tilapia is often a choice for those who do not live where fresh fish can be caught. It keeps well and fits into a wide variety of tasty recipes.
Tilapia with Almond Crust
Use a skillet or stove top pan with a lid for this one.
8 tilapia fillets, 6 to 8 ounces each
2 eggs
1 cup freshly grated Parmesan cheese
1 teaspoon lemon pepper
1 teaspoon garlic pepper
1 cup ground almonds 1/4 cup all-purpose flour 6 tablespoons butter 1 cup Parmesan cheese 8 sprigs parsley 8 lemon wedges Mix the eggs with the lemon pepper and garlic pepper and beat until blended and set aside. Stir together ground almonds with Parmesan cheese in a shallow dish until combined and set aside. Dust the tilapia with flour. Dip the tilapia in egg mixture, then press into the almond mixture.

Shell Fish
Shellfish-shrimp, crabs, scallops, clams, mussels, oysters or lobsterbecomes tough and dry when overcooked. To cook raw shellfish, shucked or in the shell, follow these basic guidelines:
  • Raw shrimp turn pink and firm. Depending on the size, it takes from 3 to 5 minutes to boil or steam 1 pound of medium size shrimp in the shell. Shucked shellfish (clams, mussels and oysters without shells), become plump and opaque when cooked thoroughly and the edges of the oysters start to curl. The Food and Drug Administration (FDA) suggests: boiling shucked oysters for 3 minutes, frying them in oil at 375 F for 10 minutes, and baking them for 10 minutes at 450 F. Clams, mussels and oysters in the shell will open when cooked. The FDA suggests steaming oysters for 4 to 9 minutes or boiling them for 3 to 5 minutes after they open. Scallops turn milky white or opaque and firm. Depending on size, scallops take 3 to 4 minutes to cook thoroughly.
Boiled lobster turns bright red. Allow 5 to 6 minutes per starting to time the lobster when the water comes back to a full boil.

Lean fish are generally under 100 calories per four-ounce (raw) portion. The primary cause of calorie buildup in seafood dishes is the added ingredients, and/or the cooking method. Poaching and steaming add no calories, while baking or grilling fish wrapped in foil requires few or no added calories. For traditional dry heat cooking methods, seafoods higher in natural oil content require less basting with oil-based sauces than do lean fish. Wine, beer, horseradish, Worcestershire or teriyaki sauce can be substituted for rich sauces, and the many low-cal alternatives to regular salad dressings and other ingredients make it an easy task greatly to reduce the calories involved in cooking delicious seafood dishes.
    BAKING Baking is an acceptable method of preparation for virtually any form of seafood. The ten minute rule applies at an oven temperature of 450 degrees F, and all but the fattiest species will require brushing with oil or butter or cooking in a sauce or liquid. A healthy variation of this cooking style, called foil baking, involves wrapping the fish in a sealed foil pouch (leaving room for steam to circulate around the fish) and allowing an extra five minutes for heat to penetrate the pouch.
