Hello, use thin slices. I don«t use garlic. I slice potatoes and put salt (not too much) and a few onion too. I fry onion in a lot of hot olive oil ( that is the best part) for a few minutes and then I put potatoes and fry all together until potatoes are well fried (they are like golden). Oil must be hot (but not very, very much) and enough for doing it well. I take onion-potatoes out and I reserve for drippind the oil. I put eggs in a bol and beat them with a little milk (just a few). After this I put the onion-potatoes in bol and mix it slowly. I usually taste it for knowing if more salt is necessary and correct it. When you are going to do it in the frying pan, you now it has to be a good one and you have to put olive oil, but not too much, just for covering the bottom of it . I think you know the rest, because you have done someone. I like it best when it is not hot. Good luck and if you need something, you know. Thank you, Rosa. Your method sounds very similar to what I did, although I was guessing how to do it and obviously you don't need to guess :)

While in high school, I was an exchange student to Madrid. I lived with a Spanish family and my memories of each meal are as wonderful as the many world class meals I eat as a restaurant reviewer. I remember my “Spanish mother” bringing home fragrant goodies from the market and then spending the day cooking up gourmet delights. How did she do it? The olive most used in Puerto Rico is the manzanilla, which is a pitted green olive stuffed with pimiento. Acelga -Swiss chard. Used to make caldo Gallego (Galician Soup). Acerola -West Indian or Bardados cherry. This fruit is best known for its high vitamin C content. Traditionally it was used to make refresco de acerola, or acerola juice. Achiote or Achote -annatto seeds. Achiotera -a container used to store annatto oil with its seeds. The oil is heated every time it is needed so the seeds can release their yellow color. Adobo -The basic seasoning combination of Puerto Rican cooking. Aguacate -avocado Agua de Azahar -orange blossom water. A distilled water made of orange blossoms, used to flavor traditional desserts like rice-flour stovetop custard. Aji Caballero or Aji Picante -hot chili pepper. A hot pepper about 1 inch long. It is the only hot pepper used in traditional cooking. It is also used to make pigue, a fermented vinegar used as a condiment.

We all love big glossy full-colour shots of exotic cities or ancient urns spilling Provencal lavender, but we equally need some recipe books to get us launched into a life of confident and enthusiastic cooking. This very volume could be your launch pad for Spanish cooking.
    Having said how much I love the recipe photography, I should tell you that there are indeed city shots, folkloric dancers, some sheep and a cow, but they are confined to the fascinating travelogue section at the start of the book. These pages will get you in the mood for some delicious Spanish food. The ingredients for those dishes and even the traditional earthenware casseroles to serve them in (your next Spanish holiday souvenirs, and more practical than a straw donkey) are all detailed.

Saffron originated in Arabia and was brought to Spain sometime in the eighth century. Since then, saffron has been associated with Spanish cuisine, although the spice is also a favorite addition to French soups and Milanese risotto. This reddish spice is probably the most expensive culinary herb because an ounce of saffron is actually 200,000 dried crocus flower stigmas each hand-gathered crocus flower has only three stigmas. Nevertheless, a pinch of saffron is enough to lend a distinctive flavor and reddish orange color to pastries, soups, and rice dishes. The reddish color of saffron is due to its carotenoids crocin and crocetin; the saffron stigmas also contain the aromatic essential oil called safranal. In the herbal therapy world, a couple of drops of saffron oil (made from a few dried stigmas in a cup of vegetable oil) in a glass of water is recommended to alleviate sluggishness and general fatigue. In Spain, the spice is a must in fish stews, and in practically all dishes highlighting mussels, shrimps, squid, and other seafood. In general, saffron goes well with dishes that also contain fennel, garlic, and white wine.

Learn Spanish while enjoying Spanish cuisine! In this course you will complement your Intensive Spanish course with a specialised 2 week course (3 classes per week) in Spanish cuisine. The cooking course must be combined with an Intensive Spanish course (20+5 hours/week) at our school in Salamanca. Cooking classes take place twice a week for 2 weeks on Tuesday and Thursday evenings from 6.30pm to 8.00pm. You will learn to prepare Spanish "tortilla", "sangria" and "tapas" and of course sample your new recipes. The cooking course includes ingredients, tasting and discussion. The cuisine teacher is a professional teacher of culinary arts. Duration 2 weeks Frequency Intensive Spanish course: 20 + 5 classes weekly
