Sweden is a great region, and Swedish food is a great ethnic food. At
its best, Swedish food is excellent, largely meat-, fish- and potato-based, but
varied and generally tasty and filling.
Typically classical Swedish cooking includes lots of seafood, herring in
particular; open faced sandwiches; and Swedish meatballs, a smörgåsbord
favorite: Swedish meatballs (köttbullar).
If you equate Swedish food with smorgasbord, meatballs and dill, think again! Although these are great delights, you'll enjoy a wide range of tasty, fresh-cooked food in Sweden. However, for those who prefer the authentic taste of Sweden, here's my favourite recipe:-
Farmors Köttbullar
1lb of minced beef
onion - finely chopped
1 cup of soft breadcrumbs or oats 1 egg Milk (about 1/2 decilitre) Soak oats or breadcrumbs in milk for 1/2 hour Add mince and mix until smooth and well blended together Add onion - mix well Finally add egg and salt and pepper Roll into little balls and fry in margarine for about 10 minutes Served kottbullar with freshly mashed potato (potatismos) and a salad. Enjoy!

Cloudberry Preserves (HJORTRONSYLT)*
Oat Crisp Cookies (HAVREFLARN)*
Swedish Toasted Rolls (VICTORIA)*
Swedish Vanilla Sauce (VANILJSÃ…S)*
Whipped Cream
Mint Leaves (for garnish) Directions 1. Crush toasted rolls.
2. Add some lingonberry preserves to the bottom of a martini glass.
3. Layer some crushed toasted rolls on top of that.
4. Add another layer of lingonberry preserves.
5. Add a layer of vanilla sauce. 6. Repeat steps 3 and 4. 7. Add a generous layer of cloudberry preserves. 8. Top with whipped cream and another small dollop of cloudberry preserve in the center. 9. Garnish with a mint leaf and an oat crisp cookie. ( Enjoy! )

In the last few decades immigrants from all over the world have enriched our food culture with a host of exciting dishes. Foreign fast food, for example, has become an inseparable part of Swedish youth culture.

If you want to try some typical Swedish fast-food, you can go to a hot-dog stand (korvkiosk). There you can choose between fried and boiled hot dogs, served with French fries or mashed potatoes together with mustard and/or ketchup (Senap eller ketchup? you will be asked). Lately, som new dishes have turned up in the stands, like baked potatoes.
If you want to taste some Swedish homely fare you can try pea soup with pork and pancakes for dessert. This dish is usally served on Thursdays and if you want to go the whole hog you should order some Swedish punch for the pancakes, a yellow and very sweet alcoholic beverage, usually served ice-cold.

Smörgåsbord Favorite
Swedish meatballs are probably one of the best-known Swedish cooking specialties, definitely a necessity on the smörgåsbord. Norway, Denmark and Finland have their own versions, too. Every Scandinavian cookbook has at least one recipe, usually several. The varieties are staggering to think about! Why so many? How should you pick one? Remember that meatballs were probably a way to use up leftovers, and then the mystery of all the different recipes clears up. The cook used the meat that was on hand, a filler that was available, and ingredients for the sauce based on not only regional or family preference, but what was handy. Some recipes call for half beef, half pork. Other recipes have half veal, half pork. Some have one-third each of pork, beef and veal. If you have dietary or political objections to any of the meats, substitute others. Once, as a way to include a vegetarian friend in a smörgåsbord I was serving, I made a recipe using only a vegetarian substitute for ground beef (and only vegetable oil, no dairy or meat products in the sauce). It wasn't great, but it wasn't bad, either. For flavoring, some recipes use nutmeg and dry mustard for flavoring, others use minced onions and allspice, others use thyme and marjoram. White pepper is a common ingredient. I once made them with only minced capers for flavoring, and loved it.
