Activities of food scientists include the development of new food products, design of processes to produce these foods, choice of packaging materials, shelf-life studies, sensory evaluation of the product with trained expert panels or potential consumers, as well as microbiological and chemical testing. Food scientists at universities may study more fundamental phenomena that are directly linked to the production of a particular food product and its properties. Americans have largely ignored this well-intentioned advice, a new study shows. MS in Food Science, Dairy Science from an accredited university with a minimum of 5 years experience in the food industry.     Research Centers The Department of Food Science is dedicated to the education of undergraduate, graduate and nontraditional students in the field of Food Science and the study and application of science and technology to further basic knowledge, add value, foster economic development and provide a safe, healthful and high quality food supply. We have a unique combination of teaching and research laboratories and a large pilot plant. The Department is the major academic center for food science in New England and the only research- oriented department of its kind in Massachusetts. Our research emphases since 1998, until now, are in the five broad areas of Food and Environmental Biotechnology Physical-Chemical Properties of Food Food Safety , and Health and Wellness and Food Science Policy Food and Environmental Biotechnology Food Biotechnology encompasses biological systems for modification and/or separation of whole organisms, tissues, cells, proteins and biological molecules, including DNA of plants, animals and microorganisms. We have been working in several internationally recognized areas including development of novel plant tissue cultures, with a unique plant cell culture facility, and whole plant systems to study the synthesis of bioactive phenolic metabolites. These may be used for improving health, for disease prevention, or for pathogen control when they have bacteriostatic or bactericidal activity.

    The study of food science emphasises on the composition of foods and the changes that occur when they subjected to food processing. Functional foods are foods that promote health beyond providing basic nutrition. Our nutritional status, health, physical and mental faculties depend on the food we eat and how we eat it. Access to good quality food has been man's main endeavour from the earliest days of human existence. Safety of food is a basic requirement of food quality. "Food safety" implies absence or acceptable and safe levels of contaminants, adulterants, naturally occurring toxins or any other substance that may make food injurious to health on an acute or chronic basis. Food quality can be considered as a complex characteristic of food that determines its value or acceptability to consumers. Besides safety, quality attributes include: nutritional value; organoleptic properties such as appearance, colour, texture, taste; and functional properties. Food systems in developing countries are not always as well organised and developed as in the industrialised world. Moreover, problems of growing population, urbanisation, lack of resources to deal with pre- and post- harvest losses in food, and problems of environmental and food hygiene mean that food systems in developing countries continueto be stressed, adversely affecting quality and safety of food supplies.
