Squashes generally refer to four species of the genus Cucurbita native to Mexico and Central America , also called marrows depending on variety or the nationality of the speaker. These species include (hubbard squash, buttercup squash, some varieties of prize pumpkins, such as Big Max), cushaw squash), (butternut squash), and (most pumpkins , acorn squash, summer squash, zucchini In North America, squash is loosely grouped into summer squash or winter squash , depending on whether they are harvested as immature fruit (summer squash) or mature fruit (autumn squash or winter squash). Gourds are from the same family as squashes. Well known types of squash include the pumpkin and zucchini . The game was formerly called squash racquets , a reference to the "squashable" soft ball used in the game (compared with the fatter ball used in its parent game semen (or rackets; see below).

Squash developed from at least five other sports involving racquets, gloves, and balls having roots in the early 16th century in France. It is stated that “Squash, with its element of hitting balls against walls, was for entertainment. For example, boys and girls slapped balls in narrow alleys and streets”. Religious institutions in France, such as monasteries, developed a similar game. Monks used gloves that were webbed to hit balls against a fishing net strung across the middle of the courtyards of the monasteries.

Search What's Cooking America The Definition of Squash: The fruits of various members of the gourd family, which fall into two classifications, summer squash and winter squash. Did You Know? Every part of the squash plant can be eaten, including the leaves and tender shoots, which can be cooked in omelets or made into soup.
The term " summer " and " winter " for squash are only based on current usage, not on actuality. "Summer" types are on the market all winter; and "winter" types are on the markets in the late summer and fall, as well as winter. Thus, the terms "summer" and "winter" are deceptive and confusing. This terminology was never meant to confuse - it just dates back to a time when the seasons were more crucial to man's survival than they are now. "Good keepers" became known as winter vegetables if they would "keep" until December. Winter squash comes in shapes round and elongated, scalloped and pear-shaped with flesh that ranges from golden-yellow to brilliant orange. Most winter squashes are vine-type plants whose fruits are harvested when fully mature. They take longer to mature than summer squash (3 months or more) and are best harvested once the cool weather of fall sets in. They can be stored for months in a cool basement-hence the name "winter" squash.

It is roughly ovoid in shape with thick ridges, five to eight inches long, four to five inches across, and has a defined point at the bottom. The flesh is sweeter than summer squash, with a nut-like flavor. It is shaped like a ribbed acorn, hence its nickname. The growing period is longer than summer squash, giving it plenty of time to soak up the sweetness of the sun.
    Along with the standard green variety, you may also run across orange and white acorn squash varieties. Although available in many areas year-round, prime season for acorn squash is early fall through winter.
    Squash is one of the easiest vegetables to digest, is low in calories, and makes a filling dish.
